I would like to know the proper way to say "in loving memory of my sister"
So far I think it is "in amatum consanguineus memoriam"

The one you have is no good. "Consanguineus" is a male word for someone related by blood as opposed to marriage or adoption, and it's the male form, "amatum" is the wrong form to go with anything, and that's only the start...

" In memoriam amantem sororis meae" is a literal translation of your English words.

If I were you, I'd contact either the Classics department of a college or university, or professional engravers. My halfway educated guess is:

In memoriam carissimae sororis
(In memory of my dearest sister)
