yes I know open mouth and insert .... how do you prepare and cook your fav veg?

I recently discovered roasted veg.... blanche carrots, broccoli etc then toss in olive oil with salt and pepper and roast in oven ... tastes lovely and the veg are nice and crispy !!

Edit: As many of you have said ... steamed are best for you ... but if you aren't keen on the taste .... it is better to eat some rather than none and I am afraid steamed or boiled don't appeal to me much !!

another quick one that saves your vits! Stir fry in a little oil, peppers, onion, baby sweetcorn, sugar snap peas, green beans, mushrooms, anything like that and add a little soy sauce and sweet chilli sauce, a nice spicy change
then pop in mouth and chew!

Yes roasted veg is lovely. I also like to cook my veg in a steamer, they come out real crispy and still have all the nutrients which you tend to lose when you boil them.

When I'm tired I can come home, pop my steamer on with the veg, put a salmon/chicken breast on the bottom layer, add some herbs, olive oil and lemon juice, set it for 20 minutes, relax with a glass of wine and don't have to worry about having to wash up a pile of dishes or stand over my cooker.

The best way by far, wherever possible, is raw. NOT cooking vegetables retains all the natural nutrients. If they must be cooked, minimal cooking is best, like 10 minutes in a steamer. Broccoli is lovely when it is still green and crunchy and my favourite! Carrot can be grated raw. On the other hand, my mother insists sprouts should be boiled for 8 weeks. Come October she will start the veggies for Christmas dinner!

I don't add anything to mine except the usual salt, pepper and butter...but I cook them about 8 minutes and then put them under cold water to make them crisp. For fast meals I just throw some frozen veggies into the microwave to defrost them and eat with butter. Your idea sounds great though. I try to do without the oven since here it's sub-tropical and so the oven heats up the house too much.

I like roasted vegetales, too. Even better are some of these cooked over charcoal:
Sliced potatoes
Sliced summer squash
Sliced zuccini
Thick slices of white or red onion
Large asparagus spears

Brush the vegetables with olive oil before and during cooking.

I hate vegetables, but I find ways to eat some of them. Carrots are good in soups and stews. Celery is as well. I also put them in stuffing (kind of eliminates the healthy aspect) and pot pies. I like cucumbers with pepper and salt. Broccoli is really good with cheese. I also think vegetables taste good in stir fries.

Sounds like a nice way for veggies--I'll try that next time.
Potatoes, I leave the skins on always cus that's where the vits are. Mostly, you don't want to overcook as this destroys the flavor, vitamins and makes them mushy and unpalatable.

And THEN you open mouth and insert!!!

cooked in a pressure cooker. taste good and keep the goodness. Also roasted in the oven Ive even tried that with swede but it needs boiling first.

Steaming is a good way to cook veg as it preserves their flavour and vitamin c content.

Fresh if at all possible...

But roasting or steaming is pretty good, too. I don't roast much in summer as I don't want to heat up my kitchen!
