The most beautiful American Hardwood that there is is Curly or Birdseye Maple. Check out the link below to a site I've bought from that has a fantastic variety. Tables and cabinets made from this wood, if stained and finished properly, look beautiful and are worth thousands.

My personal preference is mahogany with a French polish or a finish like that, would expect to pay at least $500, probably substantially more.
You will find that getting people to decide on a design and not changing their minds will be the hard part.

Bryan, Your question is akin to asking about an automobile, and the color.
Every one is different, with different life styles, influenced by different cities/ towns/ country side/ heritage, etc.
Being a south Texas ranch boy, (retired) with a home in the desert mountains of north central Mexico ( I am a Gringo), and a home north of Houston, Texas,I LOVE NATURAL MESQUITE, WITH A CLEAR PROTECTIVE COATING. How-ever, this is only one of probably 2,000,000 choices.

Mission, or Arts and Crafts style, in what else; Oak. I wouldn't want to buy it. My joinery is superior to what I can find in any furniture store. You will find that you must sacrifice your standards to remain competitive in the market. Things like dovetails, and mortises get replaced with half lap joints, and pocket screws.

Being from Idaho originally, I would choose pine.
I miss Idaho pine so much and it makes awesome rustic looking furniture when it is bare, but would look nice with a dork stain as well.

the definition of "high-end" is in the eye of the beholder. But I would assume that high-end includes hardwoods, exotic hardwoods, inlays, marquetry, sophisticated finishes and all that jazz.
