SWEET DUMPLINGS IN RHUBARB SAUCE

1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 tbsp. sugar

1 tbsp. butter

1/4 c. washed and drained berries

6 tbsp. milk

Mix well. Drop mixture from tablespoon into boiling rhubarb sauce. Cover. Cook over low heat 12 minutes. Lift dumplings into serving dish. Pour sauce over them

The problem here is you've already stewed the fruit. Normally when you make dumplings you cook them on top of the fruit while it's cooking.

The recipe I usually use is this for cinnamon dumplings:

In a medium bowl, stir together flour, baking powder, and salt; gradually stir in milk, mixing just until a wet dough forms.
Reduce heat to medium-low. Spoon tablespoons of dough (you should have about 18) over simmering fruit; sprinkle all with cinnamon-sugar.
Cover skillet; simmer very gently until dumplings are set and dry to the touch, 10 to 12 minutes. Serve warm, with ice cream if desired.

Now, since you've already cooked the fruit, you might consider serving it like a shortcake over home made or store bought biscuits with whipped cream.

Sweet Dumplings

2 cups water
1 1/4 cups maple syrup
1 1/2 cups pastry flour or 1 1/4 cups all-purpose flour, sifted
3 tsp. baking powder
1 T. sugar
1/2 tsp salt
1/4 cup cold butter
1/2 cup milk
chopped nuts


1. Pour water and maple syrup into large pot. Cover and simmer while preparing dumplings.

2. Sift flour with baking powder, sugar and salt. Cut in butter. Make a hole in the center of the dry ingredients; add milk and stir slightly. Drop large spoonfuls of batter into the boiling syrup. Sprinkle nuts over dumplings. Cover and simmer, without removing cover, for 15 minutes. Serve hot.

Well there is always the old peach cobbler trick. Get a can
of large flaky biscuits from the dairy case, open , halve, and
push them just slightly into the juice then bake untill the buscuits are done. ( This works just as well if you start with them on the bottom, and put the fruit mixure over them. )
