4th of July Cupcakes:

18 cupcakes
18 1/4 ounces white cake mix
1 cup water (or as indicated on cake mix directions)
1/3 cup oil (or as indicated on cake mix directions)
3 eggs (or as indicated on cake mix directions)
1/2 teaspoon blue food coloring
1/2 teaspoon red food coloring
1 (16 ounce) can vanilla frosting
red white and blue candy sprinkles
1. Prepare cake mix according to package directions.
2. In a small bowl, combine 1 1/3 cups batter with blue food coloring. In another small bowl, combine red food coloring with 1 1/3 cups batter. Leave the remaining batter plain.
3. Fill paper-lined muffin tins wtih 2 tablespoons red batter, 2 tablespoons plain batter, and 2 tablespoons blue batter. Do not swirl batter, leave it layered.
4. Bake at 350º for 20-24 minutes or until a toothpick inserted in a cupcake comes out clean.
5. Cool 10 minutes in pan and then remove cupcakes to a wire rack to cool completely.
6. Frost with vanilla frosting and decorate with sprinkles.

Cream Cheese Cupcakes:
INGREDIENTS
3 (8 ounce) packages cream cheese
1 cup white sugar
1 1/2 teaspoons vanilla extract
5 eggs
3 1/2 cups apple pie filling
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Line 2 (12 cup) muffin tins with paper liners.
In a large bowl, combine cream cheese and sugar. Mix until soft. Add eggs and combine. Add vanilla.
Distribute evenly into 2 (12 cup) lined muffin tins and bake at 325 degrees F (165 degrees C) for 35 minutes.
When done, the centers will fall in a bit while cooling. When cool, fill depressions with 2 to 3 tablespoons of your favorite fruit pie filling. Store in the refrigerator.

INGREDIENTS
1 (18.25 ounce) package angel food cake mix
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Line a 12 cup muffin tin with paper bake cups.
Prepare batter as directed on the box. Fill muffin cups 2/3 full.
Bake for 15 to 20 minutes, or until done.

INGREDIENTS
1 (18.25 ounce) package French vanilla cake mix
2 tablespoons graham cracker crumbs
1 1/2 cups water
3 egg whites
24 milk chocolate candy kisses
1/2 cup graham cracker crumbs
1 (7 ounce) jar marshmallow creme
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
In a large bowl, combine the cake mix, 2 tablespoons graham cracker crumbs, water and egg whites. Beat for 2 minutes at high speed of an electric mixer.
Divide batter evenly among paper lined cups, filling about 2/3 full. Place a chocolate kiss in each cupcake, pressing in lightly. Spoon 1 teaspoon graham cracker crumbs onto each cupcake.
Bake at 350 degrees F (175 degrees C) for 18 to 25 minutes. Remove from the oven and top each cupcake with 1 teaspoon marshmallow creme. Dip spoon into hot water to prevent sticking. Return to oven for about 1 minute to melt slightly.

INGREDIENTS:
1 package French vanilla cake mix
1/2 cup applesauce
3 eggs
1 cup water
2 cups (about) small fresh blueberries, divided use
1/2 cup dried cherries
8 ounces cream cheese, at room temperature
1/2 cup confectioners' sugar or to taste
1 teaspoon pure vanilla extract
1 roll red-colored fruit snack or fruit leather
PREPARATION:
Soak dried cherries in hot water for 15 minutes to plump. Drain thoroughly, then dry with paper towels. Set aside.
Preheat oven to 350 degrees.Line standard-size muffin tin with foil or paper muffin cups.
Combine cake mix with applesauce, eggs, and water, mixing on low speed for 30 seconds. Increase to medium speed and beat another 2 minutes. Fold in cherries.
Divide batter evenly into 24 paper-lined muffin cups. Drop 5 blueberries on top of the batter for each cupcake. Do not mix or press the blueberries into the batter.
Bake 18 to 20 minutes, until lightly browned. Cool to room temperature on wire racks before proceeding.
Beat cream cheese with confectioners' sugar and vanilla extract until smooth and creamy. Spread cream cheese frosting on tops of cooled cupcakes.
Using remaining blueberries, stud cupcakes with blueberries in rows (for stars) over the upper left quarter of the cupcake.
Cut the roll of fruit leather snack into strips 1/8 inch wide and 2 inches long. Place red fruit strips across the remainder of the cupcake surface in rows (for stripes) over frosting. Refrigerate to set frosting.
These are fun for the kids to decorate for 4th of July, Flag Day, or Memorial Day.
Yield: 24 cupcakes
