Very valid.
It's not that we change God's character. It's that we either project ourselves onto our perception of God's character, or we pick up on those aspects of God that we individuals can most readily relate to.
One explanation: God is like a multifaceted diamond, and we human beings are the facets. We can only be one facet, and we can only see those facets that are nearest us. We can't be, or even see, the whole diamond.
In the Parable of the Talents, the two servants who trusted and obeyed their master were rewarded by a joyful master. The one who disobeyed out of fear, because he saw his master as a hard and unfair man, was punished harshly and "unfairly". Maybe you get what you expect.

Yes, I think she does have a point. I mean, I've heard people say that god is an angry and vengeful god. This no doubt comes from those who are judgmental and believe that if you sin, you go straight to hell.
I, however, believe that god is a loving, kind, forgiving god who will forgive if the sinner truly repents for his/her sins and asks for forgiveness.

Absolutely.
For instance, you can always tell a Christian who has become acquainted with Jesus, because he is kind and generous toward others. There are folks who call themselves Christian, who have never taken the trouble to truly get to know Jesus, although they may be very good at quoting scripture.
The difference is totally mind-boggling.

Yep. I think we see deities as we see our values.
Men create gods after their own image, not only with regard to their form but with regard to their mode of life.

I find that it fits my experiences with Christians very well. And I find that it also well-supports the theory that you make up your own god, or alter your god to suit you.
You know you've made up your god when he hates all the same people you do.

I am of two minds about this, because it's a big black/white...
it does seem like a general trend, though.

Sure it is valid as people's perception of 'God' is colored by their lens of understanding of the world and also, their personality.
