... I'm making them right now, the thing is this:
the box is DEFINATELY older than 6 (could be 7) years old. The flour was the way it should be (not extreamly dry, packed in an air sealed bag) the blueberries were packed in liquid in airtight cans. There is no expiration date on the box, but I just found a copyright for the general Mills corporation dated 1997 on the side of the box It also says series 17. What's the real risk involved here, if any? This is a completely serious question, serious answers only please.

I would go ahead and make your concoction. When it is ready, maybe you can invite some friends over and give them a piece and see if it makes them sick or not. If not, you have a delicious snack for yourself.

LOL, that's funny...health-wise, you're not going to get salmonella or any other kind of food poisoning from it. Canned fruits can last for years. What I would worry about most is the mix being so old that it won't rise properly in the oven and you'll end up with blueberry pancakes! Sometimes the baking soda that is in these mixes breaks down over time and doesn't work to rise the dough. That's really your only risk.

The only problem with an old box is that insects may have invaded the box, drilled holes in the flower sack and eaten. If you don't see any evidence of that, I think it'll be ok, though I'd probably add a little bit 1/2 tsp of baking powder, since baking powder loses its effectiveness when it gets old.

Secret: I like BLUEBERRY muffins. I get frozen blueberries or frozen mixed berries, thaw them in the freezer and add them to the batter (not the juice). You get really, really moist, fruity muffins. Yum!

Can you find a package of it on a store shelf? All the ingredients are supposed to be listed. It's my guess that the packaged product has chemicals added to enhance flavor and texture.

Are you willing to bet your health against a couple dollars that replacing this food would cost?
If you get sick, you'll kick yourself for being cheap and/or lazy and not discarding this ancient crap.
Bon Apetit!

It is sealed so there is no worry. If the flour was bad there would be mealy bugs in it. (Tiny black bugs) Go for it and enjoy! I love those muffins!
