If possible, something from the place where you work. Maybe even something as simple as an advertising pen. It shows you connect the job with the person who helped you.
Otherwise, taken 'em out for drinks and dinner.

I'd say a nice dinner or drinks but if that would be inappropriate than give them a gift card to Starbucks because coffee and oxygen are the 2 things everyone who has a job need.

if they were instrumental in getting your position, you are very gracious to hand deliver a card and perhaps a single flower.
If it is a great job, you might want to treat them to lunch sometime after your first or second paycheck. It isn't necessary, but it is a lovely gesture if you have a great job to celebrate.

Send a thank you card and be sure you perform well at your new job. Don't goof up and leave the "someone" thinking he was a dork for recommending you. That's what counts.
Or send him a good wine with the thank you card.
