you could make homemade chilli or salsa or pasta sauce, or something of that nature. Or you could make tacos or hamburgers or a salad or something you can put tomatoes on or in. Or you could do what my boyfriend does and coat sliced tomatoes in batter and fry them. They're actually really good.

Ketchup. Don't know how, but it's done with lots of sugar and the tomatoes are squashed or something. Get a recipe and get to work right away, before your toms get too ripe and start to turn.

Apparently tomatoe ketchup began life in America down on the farm during the Pioneer days. A way of having tomatoes in winter without the bother of bottling.

In Victorian England it was the only way people got to eat a tomatoe since most folk believed the tomatoe was poison.
I'm not sure that it isn't. I'm just a natural born British sceptic.

Make some tomato chutney. It really is simple and will impress your friends and family.

Red Tomato Chutney.

1.8kg or 4lb of red tomatoes
225g or 1/2 lb sugar
4level teaspoons salt
400ml or 1/2 pint of spiced vinegar

Immerse the tomatoes in boiling water for 1-2 mins and then plunge them into cold water to remove the skins.Chop.
Simmer in a small amount of water intil reduced to a pulp, add the spiced vinegar and sugar and simmer until it thickens with no excess liquid. Pot and cover in clean warmed jars.
I f you have no spiced vinegar, tie 2 tablespoons of mustard seeds and 1 tablespoon of whole allspice in a old (clean) hanky, and add some cayenne pepper (1 level teaspoon) to the tomatoes.
Makes about 2 1/4lb (1kg). Enjoy!

The above suggestions are good.
If you live in a sunny place, you could make semi sun dried tomatoes. Cut them in half or quarters, sprinkle them with a little salt and sugar, place them on a foil covered baking tray, or a cake rack, cover them with a mesh or something to keep the flys off, and place them in the sun all day until dry enough.

Or maybe make home made tomato soup.

Tomato Orange Relish
1 medium-size orange
4 medium-size (about 1 1/2 lb. total)
firm-ripe tomatoes, cored and cut
into 1-inch chunks
2 tablespoons each tomato paste and
cider vinegar
1 tablespoon salad oil
1 small dried hot red chili
I teaspoon each mustard seed and
cumin seed
1/4 teaspoon ground allspice
1/4 cup firmly packed brown sugar
1/2 cup raisins
Grate 1 teaspoon orange peel and set it aside. Cut away and discard remaining peel and white membrane from orange. Cut orange into chunks.

In a food processor or blender, combine orange chunks, tomatoes, tomato paste, and vinegar; whirl until coarsely pureed. Set mixture aside.

In a 2- to 3-quart pan, warm oil over medium-high heat. Add chili, mustard seed, and cumin seed; stir until seeds begin to pop, 2 or 3 minutes. Mix in allspice, tomato mixture, brown sugar, raisins, and reserved orange peel. Stir until sugar dissolves, about 3 minutes, then reduce heat so mixture boils gently. Cook, uncovered and stirring often, until consistency is jam-like, 20 to 30 minutes. Serve hot or at room temperature. If made ahead, cool, cover, and chill up to 3 days, then reheat if desired. Makes about 2 cups.

You could make Soup Sauces and Chutney with you extra tomatoes, or even do a Tomato juice.

I'll take them! Why dont you experiment with different salsa recipes to find the one that you love the best. Salsa can be used later on in many different recipes from chili to minestrone soups and tortilla soup to hamburgers and cheesy meat dips. Its good on turkey and vegetable sandwiches too. Some people even like to eat salsa with eggs but not me. I suggest you find someone who knows how to can salsa and get some salsa prepare for long term storage. Give it away as a gift later on if you want with tortilla chips and margarita glasses. Yes, can you tell salsa is one of my favorite foods? ha haa!

concasse the tomatos and freeze them, make sauce, make soup, sun dry them. make tomato confit, give some to friends, family, and neighbors. Those are just a few suggestions.
