Bring lots of snacks and drinks; activities to keep them occupied and look for restaurants that allow kids to eat free! (Well, depending on their ages). Also write out a list and like santa, check it twice to make sure you pack everything you need as to avoid spending anymore than you absolutely have to on things you forgot.

Depending on where/how long you are looking to go somewhere, a great way to save cash is to rent an apartment as opposed to a hotel room. The prices are usually cheaper, plus then you have a kitchen so you can shop and cook at home. I rented an apartment with some friends for a week in Rome. We bought food for lunches and dinners, had one or two meals out, but we saved a bundle! More money for fun activities, and enables you to experience something you may not have been able to afford before. Check out the website Ive listed, also just search for vacation rentals.

Hotel: check if they have deals for kids, some hotels allow 2 children for free or a cheaper rate if they share with the parents.
Luggage: Have the children share a big suitcase, rather than carrying two medium or smaller sizes. In Europe, the budget airlines will give you a priority pass if you have only one bag for two people.
Food: Always have snack in the car before leaving a town you stop at. It's way cheaper than buying at the gas station on the freeway.

Stick with hotels that offer free continental breakfast and snacks. Residence in by marriot offers 1 and 2 bedroom suites and free breakfast and snack from 5-630pm. You get the extra space in the room and some nice amenities. HyattPlace, holiday in express and fsirfield inns offer similar servicces.

Always pack some type of cooler in the car, filled with tons of snacks and drinks.
Luggage: Its best to have seperate ones (you won't want to be forced to have little items brought, would you?) but if needed, a really big one (REALLY big.)
Find hotels that have free kids payment. I heard Best Western had it, but I'm not so sure.
Keep your kids away from selling things (aka: malls) but if your going to see monuments and stuff, eat before and than go, come back and eat.
