You can use sage in virtually every 'savory' dish ... but the recipe I remember most is my grandmother's 'sage dressing' when we had a goose for Thanksgiving dinner. We also had oysters in the dressing, but if you don't like them, don't use them ... just put lots of your sage into the bread, with some butter, onion, and a little salt ... stuff it into the bird or add some 'bird juice' and cook it in the oven under foil ...
You can also make a nice salad dressing with oil, vinegar, and sage (also you can use parsley, rosemary, and thyme ... yep, the old Simon and Garfunkel song).
I also have a 'non-edible' use for sage ... I bundle it up in string and burn it when I want to get the 'bad vibes' out of my house/apartment. This is an old Native American way to 'purify' a place, and they do this when a developer has discovered a 'burial site' and they want to move the bodies, or just 'return' the land to being 'sacred ground'...

There are a ton of uses for sage. Most commonly, people use it at Thanksgiving in their stuffing and turkey. You can also use it in polenta. It's great paired with parmesean cheese. You can use it on almost any poultry dish. However, I'd stay away from certain types of fish - like tilapia and orange roughy - the flavor of the sage overpowers the fish.

The only thing I really do with my fresh sage is put it in homemade stuffing/dressing. It's excellent!

It's really good cooked with any kind of meat, especially italian sausage. I like it for sauces, as well, whether red or white.

Did you know you can make tea with it?
Boil the leaves,strain an sweeten.Works for stomach achs.
Use pizza to give it an italian taste.

you can use it with fish if you like fish you can get a whole fresh fish with or wtih out the head put it in side the fish with some rosemary and bake it in a tin foil pouch
