Micro Meatloaf
1 lb. ground round
1/2 pkg. crackers, crushed
2 eggs
1/4 cup chopped green peppers
1/2 cup chopped onions
1 tsp. garlic salt
1 small can tomato sauce
mix all ingredients well with your hands in a large bowl, form into a loaf and put into loaf pan. Pour catsup all over top. Bake about 10 to 12 minutes in the microwave. Let set 5 minutes before cutting.
A yummy recipe, that is a favorite at my house.

How many people do you intend to serve?
This recipe is for six.
1 lb. of lean ground beef
1 lb. of ground turkey
1/2 lb. of ground pork
2 eggs
6 slices of soft bread
1/2 C. milk
1 small onion chopped small
1 t. garlic powder
2 T. worcestershire sauce
Salt and Cracked pepper to taste
6-10 drops of Tabasco sauce (optional)
Beat eggs and milk together with worcestershire, garlic powder, salt, pepper, and Tabasco. Soak broken bread pieces in the mixture. Mix the three meats together, then mix the bread mixture with the meat mixture.
Spray a baking pan with PAM and hand form the mixture in the pan so that it is about 3 inches thick all over.
At this point you can cover the loaf with ketchup, or slices of bacon or an herbed tomato sauce, or just spray the top with PAM to seal it so that it stays juicy inside.
Bake in the middle of the oven for 1 hour on 350 degrees. Turn oven off. Cover the loaf with foil that has been sprayed with PAM on the inside-and let rest in the oven.
Put some baking potatoes in the oven with the loaf when it begins to bake and they will be ready at the same time.
Then, all you need to do is make a garden salad.
After the meatloaf has rested in the oven, remove it from the pan and put it on a rack to let it drain. Slice and serve. A nice gravy can be made from the pan drippings.

2-2 1/2 lbs. ground hamburger meat
1 can tomato sauce
1 egg
1/2 package crackers, crumbled
bell pepper and onion diced
1/4 cup (2 big squirts) ketchup
2 rings of bell pepper and onion
Mix everything together in a large bowl.
Form into a loaf shape in a casserole or loaf pan. Cover the entire top of the loaf with ketchup.
Place the rings of bell pepper and onion on top of the loaf.
Make a foil bubble to go over the loaf (foil must not touch loaf).
Bake at 350-400 degrees for 80-90 minutes. During the last five minutes of cooking, remove foil from top.

Meatloaf Recipe
A Best Restaurant Recipe
Preparation time: 20 minutes. 10-12 servings.
Ingredients for Meatloaf Recipe:
2 pounds ground chuck (not ground beef)
4 ounces onions, finely chopped
3 ounces Worcestershire sauce
3 ounces ketchup
2 cups soft bread crumbs
3 eggs, beaten
1/2 teaspoon black pepper
1 teaspoon salt
2-4 slices bacon (medium to thick cut preferred)
Instructions for Restaurant Meatloaf Recipe:
Combine and thoroughly mix all ingredients being careful to mix lightly (mixing too vigorously will cause the meatloaf to be tough)
Form one or two meat loaves and place in one or two loaf pans
Top each loaf with 2 slices of bacon
Bake in 350 degree F oven for about one hour and 10 minutes
Drain off fat
Let sit several minutes before slicing or refrigerate and slice cold
(To reheat: place slices in covered skillet with a little chicken or beef stock over low heat until hot. Microwaving not recommended.)
You're now ready to serve it with some potatoes (mashed or otherwise) and vegetables
Any meatloaf remaining can be used in soup or spaghetti sauce or on sandwiches (also loved by my guests - see below).
An option for this beef recipe: Top with tomato sauce or Marinara sauce or brown gravy to serve.

INGREDIENTS
1 1/2 pounds ground lamb

2 tablespoons prepared mustard
1/2 cup brown sugar
1 cup warm water
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl combine the ground meat, egg, onion, 1/2 cup tomato sauce and cracker crumbs. Season with salt and pepper to taste and mix well; press mixture into a loaf pan and make a depression in the center. Set aside.
In a small bowl combine the remaining 1/2 cup tomato sauce, vinegar, mustard, brown sugar and water. Mix together until sugar has dissolved and pour liquid over meatloaf.
Bake in preheated oven for 1 hour

2 1/2 lbs ground beef
2 eggs
1 half yellow onion, chopped
1 half green bellpepper, chopped
3/4 cups plain breadcrumbs
1 tsp Spike Seasoning (sold in most grocery stores)
1 packet Lawry's Meatloaf Seasoning
1/1/2 cups KC Masterpiece BBQ sauce mixed with 1 tsp brown sugar
Mix ingredients (except bbq sauce)bake at 350 for 45 mins...remove from oven, brush with BBQ sauce, return to oven, bake for additional 20 mins.
Best served with mashed potatoes

1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)
Salt and pepper
1/2 cup Italian bread crumbs
1 egg
2 cloves garlic, minced
1/4 small white onion, grated
2 tablespoons golden or dark raisins, chopped
3 tablespoons pine nuts, chopped
3 tablespoons grated cheese, Parmigiano or Romano
2 tablespoons chopped flat-leaf parsley
1 cup arugula leaves or baby spinach
6 slices prosciutto di Parma
6 slices deli sliced provolone
Extra-virgin olive oil, for drizzling
1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni
1 pound broccolini, trimmed into florets
2 tablespoons butter
1 cup ricotta cheese
2 teaspoons lemon zest
2 tablespoons chopped fresh thyme leaves
12 grape or small vine tomatoes, halved
Preheat oven to 450 degrees F.
Put water on to boil for your pasta.
Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.
Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.
Salt water and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.
While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.
To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

1 lb. lean ground beef
1/4 C chopped green olives
1/4 C black olives
1 tsp. chopped fresh cilantro
1/4 C chopped jalapeño peppers
1/2 C catsup
2 eggs
1/2 C breadcrumbs
1 T Worcestershire sauce
1 oz. tequila
8 oz. fresh parmesan cheese
Preheat oven to 325° F.
Beat eggs, add cilantro, chopped peppers, worcestershire, tequila and pour mixture into bowl with other ingredients. Stir until mixed. Form into extreme loaf. Grate fresh parmesan cheese over entire loaf. Cook for 45-60 minutes uncovered.
Serve with frozen margaritas with or without alcohol. Serve slice with twice-baked potatoes and caesar salad and be extreme.

Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze
--Cooks Illustrated, Sept.1996
If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8
Brown Sugar - Ketchup Glaze
1/2 cup ketchup or chili sauce
4 Tbsp.s brown sugar
4 Tbsp.s cider vinegar or white vinegar
Meat Loaf
2 tsp. vegetable oil
1 medium onion , chopped medium
2 medium cloves of garlic , minced
2 large eggs
½ tsp. dried thyme
1 tsp. table salt
½ tsp. ground black pepper
2 tsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 tsp. hot pepper sauce
½ cup whole milk or plain yogurt
1 pound ground chuck
½ pound ground pork
½ pound ground veal
2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
1/3 cup fresh parsley leaf , minced
8-12 slices bacon
1. For the glaze: Mix all ingredients in small saucepan; set aside.
2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; sauté until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.
3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)
4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .
5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Mama's Cheesy Meatloaf
1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)
Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.
Sauce:
1 cup ketchup
1/2 cup mustard
1/2 cup brown sugar
Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

Mom’s Meatloaf
1 egg
2 tsp salt
3/4 cup chopped celery
1 finely chopped onion (I grate it)
1 tsp sage
1 pkg. dry onion soup mix
1 Tbsp chopped parsley (I used dried)
1/4 cup ketchup, plus more for top
1 can cream of mushroom or celery soup
2 lbs ground meat (1 1/2 lbs lean beef and 1/2 lb lean pork)
3 cups Bran Flakes cereal, slightly crushed
Blend all ingredients adding meat and cereal flakes last. Pack into a 9x5x3 loaf pan shaping into loaf. Spread top with ketchup. Bake at 375ºF for about an hour and a half. If top starts to get dark cover lightly with foil to prevent burning.

(CAMPBELL'S) BEST-EVER MEAT LOAF
1 can Campbell's condensed Golden Mushroom Soup, divided (not as good w/ plain mushroom soup)
2 lbs ground chuck
1/2 cup fine dry bread crumbs
1 egg, beaten
1/3 cup finely chopped onion
1 tbsp. Worcestershire sauce
1/3 cup water
In large bowl, thoroughly mix 1/2 cup of the soup, the beef, bread crumbs, egg, onion & Worcestershire. In 12 x 8" baking pan, firmly shape meat into 8 x 4" loaf.
Bake at 350 degrees for 1 1/4 hours or until done. Remove meat loaf to platter, keep warm.
Spoon off all but 3 tbsp. drippings from pan. Stir remaining soup & the water into drippings in pan, scraping up brown bits from bottom. Over medium heat, heat soup mixture until hot, stirring constantly Serve gravy with meat loaf.
Makes 8 servings.
