You can make ice cream with only a glass baking dish (one that can go in the freezer) and a wooden spoon -- but it takes hours to freeze. There is no quick process, without using an ice cream maker.
The ingredients have to be prepared in a mixing bowl (use a standard ice cream recipe), and then the mixture is poured into the baking dish. Cover it with plastic wrap, and every hour remove the dish and stir the ingredients so the sugars and fruit and/or nuts (if any) will not collect in the centre. It works very well, but this procedure takes many hours.

Ice Cream in a Bag
Here is a fun idea for a hot summer day. My kids love it!
Note: As in all recipes, results can vary depending on humidity, conditions, etc. Please try any recipe out before attempting in a group setting.
This project is rated VERY EASY to do.
What You Need
1 tablespoon Sugar
1/2 cup Milk or half & half
1/4 teaspoon Vanilla
6 tablespoons Rock salt
1 pint-size Ziploc plastic bag
1 gallon-size Ziploc plastic bag
Ice cubes
How To Make It
Fill the large bag half full of ice, and add the rock salt. Seal the bag.
Put milk, vanilla, and sugar into the small bag, and seal it.
Place the small bag inside the large one and seal again carefully.
Shake until mixture is ice cream, about 5 minutes.
Wipe off top of small bag, then open carefully and enjoy!
Tips
I always have sprinkles and nuts to top it off, and sometimes fruit.
To make a larger amount I would try doubling the recipe. Anything larger might be too big for kids to pick-up, because the ice itself is quite heavy.
Bob LaFara, rlafara@indy.net, shares some tips to go with Janice Krieger's Ice Cream in a Bag.
I just tried the project. I didn't have the exact ingredients, so I improvised.
1/4 tsp butternut flavored imitation vanilla
1 tbs. sugar
1/2 cup 1% milk
Ziploc sandwich bag
12 water softener pellets
1 tray of ice (Mine breaks it into small pieces and it is really only about half tray)
Large plastic bag (I didn't have a ziploc.)
I put the ice cream ingredients in the small bag and then put it, salt and ice in the big bag. I held the bag shut and sort of stirred it around on the floor for about 5 minutes. Although the salt pellets hardly dissolved, I got ice cream. It was not as smooth as ice cream, probably because of the low-fat milk -- it was a little like sherbet. I think if I had more ice in the bag I could have shaken it better. I'd recommend wearing gloves. It is incredible that it is ready in 5 minutes (not counting assembling the ingredients.)
Next, I changed the recipe. A tablespoon of cocoa, a tablespoon of sugar, and a cup of milk. I really wanted to use carob but we didn't have any. It was a tad too chocolate, but good! My daughter has milk allergies, so I suggested she try this with fruit juice. She used straight pineapple juice and got terrific fruit sorbed.

IF YOU HAVE A FREEZER (deep freeze or refrigerator-freezer) you can use a bowl (metal works better) and take cocoa, sugar and milk and freeze it; it works best if, as it starts to freeze, you stir it. (Otherwise, the milk tends to separate into water and solids; the water part would become very hard [regular ice].) Of course, you can use chocolate syrup, vanilla syrup, strawberry syrup, whatever your choice; add nuts (walnuts are good; peanuts tend to become soft), coconut, chocolate chips or any other such bakers chips. The mix can freeze in about a half hour, depending upon the size of the bowl and how cold the freezer is.
I much prefer this type to boughten ice cream!

ok llbean sells this really cool ball that you can make ice cream in, or you can do it the old school way....take 2 coffee cans with their lids...one really big one (like from a sams or something) and a regular size one. Make sure the cans are washed out well, and fill the regular one with your ice cream mix and duct tape on the lid. Take the larger can and fill it with crushed ice/shaved ice/snow and your salt and place the smaller can inside making sure that its touching the snow or ice on all sides, putting some on the top as well. Duct tape the lid on the larger can and then get the kids to sit on the floor with you and roll the can around on the floor for about 1/2 an hour and you got ice cream.....just get the ball from llbean...its like 25$ and you dont have to worry about the duct tape :)
