Animals have spirits because animals have the same fate that man does. "All go to the same place; all come from dust, and to dust all return. Who knows if the spirit of man rises upward and if the spirit of the animal goes down into the earth? (Ecclesiastes 3:20-21)" Man is just a more important creature than animals. Man can destroy the world 50 times over with nuclear weapons. Mankind rules over animals. "God blessed them and said to them, "Be fruitful and increase in number; fill the earth and subdue it. Rule over the fish of the sea and the birds of the air and over every living creature that moves on the ground. (Genesis 1:28)"
Soul is a Spirit because the soul can not be destroyed by men but only by God. "Do not be afraid of those who kill the body but cannot kill the soul. Rather, be afraid of the One who can destroy both soul and body in Gehenna. (Matthew 10:28)"

All living creatures have souls (intellect, feelings, and emotions), what animals and insects DO NOT have is a spirit! Only men and women have a spirit!

It depends on how you define "soul". If "soul" is simply a life principle, than every living thing has a "soul". But, such philosophical points aside, the essential thing is that no kind of animal has an IMMORTAL soul. That is how humans differ from mere animals like those you listed.

According to the Aristotelean definition of soul, which is what most theologists use, they all have souls. Soul is the animating principle of a living creature.
