JAPANESE SALMON WITH SESAME SEEDS
12 slices salmon, about 2 to 3 ounces
1/2 c. to mari soy sauce
1 hot chili pepper, seeded and finely minced
1 tsp. honey
1 tsp. vinegar
2 tbsp. sesame oil
3 tbsp. sesame seeds, toasted
2 scallions, green part only, thinly sliced
Place salmon in marinade made by mixing soy sauce, hot pepper, honey, vinegar, and 1 tbsp. sesame oil and allow to marinate for 2 hours. Lift fish from marinade, and dry well on paper towels.
Heat remaining sesame oil in skillet. Add salmon scallops and saute quickly, turning once, about 2 minutes on each side. Sprinkle with sesame seeds and scallions.

I rub the salmon all over with olive oil, sprinkle liberally with salt, pepper and garlic powder, mix black and white sesame seeds and roll the edge of the tuna filet in it and sear it on both sides in a hot pan for a minute and a half to two minutes so it's rare inside.
Then I mix up wasabi powder, a little soy sauce, olive oil and about a 1/4 teaspoon of roasted sesame oil for a dipping sauce.
