I want to start baking good, rustic/peasant type yeast bread, like a good crusty Italian or French loaf. I am a novice baker, so I want to start with a simple recipe. I don't mind kneading; in fact I want to learn the art of working with dough.
Anyone has a recipe to share, I would appreciate it.

Forgot to say, I don't have a bread machine. All by hand.

Here's my basic French loaf recipe

1.25 cups warm water (104F, tops)
1 tsp kosher salt
1 Tbsp sugar
3.5 cups bread flour
2 big tsp yeast

Put them in order into the bread machine, set on Dough setting. When it beeps, add some dried parsley, garlic powder, onion powder, and oregano. (Ok, maybe it's more Italian) Then you get to do the kneading. Roll it out, roll it up and seal, and let rise a bit. Brush with butter or egg wash and bake at 350 for 20 minutes or so.
