Go local. Don't go more than 100 miles from where you live and discover the area. Stay in a Bed and Breakfast, go camping, look up horse stables in the area and see about going horseback riding. See if there is a place in the area that teaches sky diving. Use your imagination. You don't have to go a thousand miles away to have a blast.

You left out a lot of details like how many days you want to go and where you currently live. Anyway, I suggest avoiding tourist traps as those areas are very good at taking away your money. If you and your gf are open to camping out in a tent you can save boat loads of cash that you'd otherwise be giving to hotels and resaurants. Plus there are many beautiful areas you can see on a camping trip. The only difficulty is many well known camp grounds require reservations which are sometimes difficult to get unless you plan months ahead.

it really depends on where you are and what you like to do.

vegas and san diego are always a YES in my book. cruises are a nice way to vacation with no worries and can be quite reasonable. disneyland, california adventure, legoland, and seaworld are always good. santa barbara is another good one. napa/sonoma valley is beautiful and quite adventurous.
tahoe and reno are nice spots as well.
