Very nice indeed! You didn't mention if your girlfriend had specific favorites or non-favorites, nor did you mention if she is one of the masses watching their weight, so here are some ideas:

1. Halibut filets with a panko crumb crust and a dijon sauce, served with fingerling potatos (steamed and tossed in an herb butter), and fresh green beans with almonds. For an appetizer, consider steamed and chilled edamame with kosher salt. For dessert, raspberry sorbet in goblets with a touch of grand marnier.
2. Grilled rib-eye steak with a bleu cheese butter, mushroom and jarlsberg salad with parsley and a lemon vinagrette or caesar salad, sweet potato home fries with kosher salt and a ketchup based dipping sauce. For an appetizer, lemon fused hummus with fresh pita chips. For dessert, strawberries drizzled with balsamic vinager and brown sugar.
3. Chicken breasts stuffed with artichoke hearts, goat cheese, and bread crumbs, served with a dijon wine sauce, rice pilaf, and a salad of baby lettuce, thinly sliced radishes, and shaved parmesan cheese (oil and vinager dressing). For an appetizer try colossal shrimp with cocktail sauce and sliced lemon. For dessert: chocolate lava cakes.
4. Teriyaki salmon filets cooked on the grill on a plank, red potatoes steamed and tossed with parsley butter, fresh green peas with pancetta. For an appetizer: whole grain crackers with assorted cheeses such as fontina, goat, Mangchenga, and brie. For dessert: strawberry shortcake.

Also, consider having good wine with dinner. Consider some of the following:

1. Rodney Strong Merlot
2. Husch Blanc de blanc
3. Yellow Tail Pinot Grigio
4. Nocetto Sangeovese

If you are a Chardonnay drinker (which I'm not), consider any of the above brands as well.

I find the best way to go is to do an internet search for "simple recipes." There are a lot of sites. Then search particular sites for easy recipes for appetizers, entrees, desserts.

They even offer menu ideas so the whole meal is planned for you.

Good luck!

for appetizer make something lite, such as a salad or serve some fresh fruit on a nice plate. if she likes seafood i love shrimp scampi with linguine pasta. you can make it all in one pot so it's not too much work. for a good recipe go to foodnetwork.com and type in shrimp scampi and search for an easy recipe. good luck ! also get a nice bottle of wine or champagne. or if she's not a drinker make some nice punch or lemonade
