I have a car that's painted white with little black specks and I never notice any bird poop on it...

Birds have no capability to poop when they want to. They lack the sphincter muscle that other animals have. They simply go when the stuff gets to the end of their digestive tract.
Anyone who have owned a black car knows that all dirt and debris shows up worse on a black paint.

Nope. Red is their favorite color, followed by ochre then magenta . Black is eight on the list.
