Unless your RMBs are mostly bone, you don't need to give quite that much muscle meat. The only time I add muscle meat to my dogs' meals is when I get lamb bones from the butcher. Your ratio of organ meats looks pretty good, although you might want to add some more variety like kidneys and spleen. Just keep in mind what your dog would naturally eat - whole prey - and try to approximate that as best as you can.
There really aren't many meats that you shouldn't feed. I stay away from salmon because there's a parasite in a species of northern salmon that affects dogs. I'm also a bit wary of wild game due to parasites. However, if you're feeding meat that's been approved for human consumption you just need to look at what your individual dog can handle. Many dogs gulp down small items like chicken wings or necks whole, which can cause problems. If you're concerned about him eating food too fast and choking, feed items bigger than his head.
Right now I have goat heads, pork liver, chicken leg quarters, beef kidneys, pork brain, pork heads, chicken feet, duck heads, whole chickens, and chicken hearts in my freezer. Variety is the key!

Check out ethnic or Asian food stores for "weird" meat. Look in your phonebook for meat purveyors if you have room to buy in bulk (if you don't have room, consider buying a chest freezer).

I disagree slightly with your percentages. The raw-feeding group that I get a lot of information from gives a 80/10/10 breakdown. 80% meat, 10% bones, 10% organs.
I feed chicken, turkey, fish, beef, pork, lamb, and rabbit.
Also- you listed hearts under organs. The heart of any animal is considered muscle meat. Organs would be livers, kidneys, intestines.
Next on my list of TO TRY is green tripe. I'm in the process of finding a good source. Think I am going to use greentripe.com.

My last dog was on a raw diet and it did wonders for her health. The supplier we ordered our raw food from offered a few different kinds of raw meats, but our dog really seemed to like the buffalo. We also fed her chicken. I hope this helps!

My guys get ground beef and raw beef bones, as well as beef liver, tripe, etc.
We also feed raw turkey necks, which they love! We do ground turkey and livers/hearts/gizzards, too.
I'd recommend you stay away from pork.

Raw meat, especially livers etc, and poultry in particular, contain bacteria and germs such as salmonella, trichinia, toxoplasma, etc. I suggest you cook the food befor eyou give it to your dog, as you'd cook your own. Even "raw" diets suggest that poultry and pork must be cooked. But beef also may have mad cow disease, so it is not so simple.
