Hi All,
A couple of years ago, I made a recipe for the classic 7 layer cookie bars, but it had a Shortbread crust on it. It was a major hit, and I would like to make it for the 4th of July BBQ we are having, but i seem to have lost the recipe. I have done many searches, but I cannot locate one anywhere. Can anyone help?

Here is one that I like. Mine isn't 7 layers because I can't have chocolate...but I think it's the kind of crust you want and you can of course play with the layers you put on top.

1/2 c butter, softened
1/2 c powdered sugar
1 c flour
1 14oz can sweetened condensed milk
1 c butterscotch chips
1 1/3 c coconut flakes
1 tsp vanilla extract

Preheat oven to 350 degrees F. Beat the butter and powdered sugar together in a bowl until blended. Add flour and mix well. Pat the dough onto the bottom of an ungreased 9-inch square baking pan. Bake 12-15 minutes or until lightly browned.

Combine the remaining ingredients in a bowl and spread the mixture over the baked layer. Bake the layers for 25-30 minutes or until the top layer is golden brown around the edges. (The center will not appear set.)

Cool on wire rack and then cut into bars.

Look on the label of a can of Sweetened Condensed Milk for "Magic Cookie Bars." You can sub nearly anything for the graham cracker crust: crushed shortbread cookies, crushed pretzels, crushed vanilla wafers, you name it!
