Here is a Italian salad recipe that I love. Good luck with your cookbook.

Italian Tomato salad

2 green onions
2 pints. Cherry or grape tomatoes
5-6 fresh Basil leaves
1 small clove garlic
1 Tablespoon olive oil
2 Tablespoon Balsamic Vinegar
Salt
Ground pepper
Red pepper flakes
1 Tablespoon (heaping) Feta Cheese
Grated Romano, Asagio or Parmesan Cheese

Wash and halve tomatoes, put in class mixing bowl
Thinly slice white part of green table onions, add to bowl
Mince garlic clove, add to bowl
Add olive oil and balsamic vinegar to bowl
Add 1 good pinch of salt
2-3 grinds of pepper to bowl
1-2 shakes (pinch) of red pepper flakes to bowl
Add feta cheese to bowl
2 pinches of the grated cheese to bowl

Pile Basil leaves on top of each other, roll tightly like a cigar and slice thinly across the roll (add to bowl)

Mix all ingredients in bowl several times
Serve at room temperature

No recipe book is complete without the addition of desserts. Here's a super easy fudge recipe my family loves:

Simply Delicious Fudge

2 cups chocolate chips
1 14 oz. can sweetened condensed milk
1 cup chopped walnuts
1 teaspoon vanilla extract

Cook chips and sweetened condensed milk on low, stirring until chips have melted. Remove from heat; stir in nuts and vanilla extract.

Spread mixture into wax paper lined baking pan (8 or 9 in). When cooled, lift paper (and fudge) from pan; remove paper and cut into squares. To cool quicker, refrigerate for about 2 hours. Store in air-tight container.
