I've worked at my current job since 2003, but I've had other side projects that have started at various times. Should I organized the experiences on my resume by start date or end date or importance?

It depends on how important those jobs are for the position you are applying for.
Put them all in your general resume for historical significance.

When applying for a job, choose and pick only what is pertinent to that job, then print that one out.

Exclude the rest in consideration to the one reading your resume. They only want to see the things that are significant to the position. Give them a break.The saying "Three pages of nothing is still nothing" applies.
