I love to make chili and pot roast in the crock pot but the following recipe is my absolute favorite:
Corned Beef & Cabbage
2 md Onions -- sliced
2 1/2 lb Corned beef brisket
1 c Apple juice
1/4 c Brown sugar -- packed
2 ts Orange peel -- finely shredded
2 ts Prepared mustard
6 Whole cloves
6 Cabbage wedges
Place onions in crockpot.Trim away any fat that might be present on the brisket. If needed, cut brisket to fit into crockpot; place on top of onions.
In a bowl, combine apple juice, sugar, orange peel, mustard, and cloves; pour over brisket.
Place cabbage on top of brisket. Cover; cook on low setting for 8 to 10 hours or high setting for 4 - 5 hours.
A couple of optional additions to this recipe:
I usually but a cup of dry black-eyed peas in the bottom of the crockpot with the onions. They turn out soooooooooo good. Don't know why I started doing that but I'll never stop!
Also, I often substitute applesauce for the apple juice. Whichever one I have on hand goes in the pot.

They have a whole section of crockpot recipes. Anything that can cook for 8 hours would be great to do while at work.
Also, check the freezer section of your grocery store. You can find bagged meals that you just dump in the crock b/4 work and when you come home they're done. No prep required.

Pot Roast recipe
Ingredients:
4 pounds beef chuck or blade roast
1 medium onion chopped
1 teaspoon seasoned salt
1 teaspoon seasoned pepper
3/4 cup water
Directions:
Brown roast. Place in crockpot. Salt and pepper. Cook roast in crockpot for 7 to 9 hours on low. Simmer about a cup of water in the skillet you browned the roast in and stir to get all the brown bits in the skillet mixed in. Save for gravy.

there are frozen crockpot dinners too in the frozen foods isle that are quick and easy
crock pot macaroni ( my favorite as a kid)
16 oz cooked and drained macaroni noodles
2 t. canola oil
1 1/2 C milk
1 t. salt
1 Can evaporated milk
3 cups shredded cheese ( i like colby jack but any mixture is yummy)
1/4 C melted butter
2 T minced onion
mix all into crockpot cook low 3-4 hours

CROCKPOT CHILI
1 large can of Brooks mild chili beans
1 large can of Brooks hot chili beans
2 lbs. hamburger
1 large jar of salsa
1 bottle of ketchup
1 onion (chopped)
Fry hamburger and onion together until hamburger is done. Mix all ingredients together in a large crockpot. Set the temperature to high and cook for 6 hours.
Reduce heat to low and let simmer until ready to serve.
CROCKPOT TURKEY BREAST
turkey breast
1 packet of onion soup mix
1 can of cranberry sauce
salt and pepper to taste
Sprinkle salt and pepper (to taste) and the packet of onion soup mix on the top and bottom of turkey breast.
Add cranberry sauce to top of turkey breast and cook in crockpot on low overnight (8 hours) or for three to four hours on high.
CHUCK ROAST IN THE CROCKPOT
1 pkg Knorr's onion soup mix
1 can beef broth
1 can Campbell's Cream of Mushroom soup
1 medium sized chuck roast
In the morning, before leaving for work, or at night before going to bed, put all ingredients into the CrockPot and cook on LOW for approximately 6-8 hours.
The beef will fall apart when finished.
Serve over cooked and buttered egg noodles.
EXCELLENT!
BEST BAKED BEANS (CROCKPOT)
1 (15 oz.) can butter beans
1 (15 oz.) can kidney beans
1 (28 oz.) can pork and beans
1/2 c. ketchup
2 tbsp. mustard
1/2 c. brown sugar
1 tbsp. worcestershire sauce
2 chopped onions
6-8 strips of bacon, chopped
Place all ingredients except bacon in crockpot. Stir together. Place bacon on top. Cook on low for 8-10 hours.
Yummy!!!!!!!!!!!!!!!

I like to boil some chicken tenderloins until they're well cooked. Then I shred them finely, usually using two forks or my hands. Then I put them in the crock pot with my favorite bbq sauce and let them go all day. Then I serve them on toasted kaiser rolls with thin sliced cheddar cheese!
