When you install Ubuntu it will install something called GRUB which is a boot loader. When you start your computer a screen will show you the OS Selection menu.

Both Vista and Ubuntu are designed that when installed in a dual boot setup they will add a menu option to the boot up.

At the point where you would normally get the Windows splash screen with the bar scrolling at the bottom, instead you will be a menu where you can select the OS you want to boot. If you do not select one with in matter of second (you can set the time), it will load whichever OS you have set as the default.

When installing Ubuntu, install with a GRUB boot option. In Ubuntu, edit the GRUB menu.lst file. Make sure GRUB has the location of Vista, and in the menu.lst, change the timeout from 3 to about 7 seconds.
When restarting, in the 7 second time-frame, hold esc to boot into Ubuntu.

When you switch on your computer you will be presented with a menu.

The default option will be to boot Ubuntu. You have about 10 seconds to change that option if you want to select Windows instead.

Ubuntu will install a boot loader that will give you the choice at start up. You select which OS you want to run then it loads it.

after POST your computer should pause with the options for you to choose everytime you start your computer. If you just leave it it will continue after about 30 seconds or so to load the default os.

It depends on the bios and computer configuration which keys to press, but it should be one of the 4 keys: f7, f8, f9 or f10. Most likely it will be f8. Press it as soon as the computer splash screen loads...and you'll get the options.
