What are the different functions of a food and/or beverage menu in a restaurant? What are they for? Why are they used?

without them how would we know what to order?

Well, the function of the menu design is to be enticing, reflect the goals of the restaurant (like you wouldn't use a Mexican themed paper or cover for a French Bistro). Obviously, the main function is to tell the patrons what's available and the prices. Then there's the disclaimers. Like "Gratuity of 20% will be added for parties of 6 or more", or "If you'd like to split a meal, there will be an additional charge of $2.00". "Horseradish is an additional $1.00", "No free refills on milk", things like that. Those phrases are for the restaurant to cover their butt legally. If a customer got ticked off at their bill, it's written in the menu to point out that it's for all customers, not just you. And it keeps the place from getting sued.

It's nice when they have separate menus for food & drinks. What if you're having a good time, arrive at the restaurant, & haven't thought about what food you'd like? Go to the drink menu! Soon, you'll have a drink & can make a good decision about what you'd like. No pressure.

I think it's pretty obvious. A menu is there to help you decide what you want to eat.
