They most certainly can get sick. You are mistaking prey that they have freshly killed and eaten to meat from the grocery store that has gone through a lot of processing and is in no means fresh by the time it hits the shelf.

Even the new craze of dogs and cats being fed raw food, commonly known as 'raw diets' has to be specially processed to insure that dogs and cats are not getting sick.

Cats have only recently began to eat cooked foods, throughout their evolution they have eaten small animals and insects and they lacked the ability to "fire up the grill." On the other hand I don't get sick when I eat raw meats such as fish and beef so go figure.

The scientific answer is that they have a very short, acidic digestive tract which is very resilient to bacteria. Humans, being omnivores, have a longer digestive tract than carnivores. This allows food to "linger" for 24 hours or even longer, giving bacteria and parasites time to infect them.

Healthy cats (and dogs) have a natural resistance to Salmonella. Clinical disease can manifest when there is a compromise to their immune system through age, stress or disease. Salmonella can still be isolated from the faeces of these animals and pose a threat to their owners however.

Raw meat isn't good for them...I wouldn't give it to them again!
