All you have to remove is the cylinder head to do a valve job,the pistons can remain as long as the engine had good compression before the valve problem surfaced,and if they are within specifications.If you install hardened valves,you can use unleaded fuels.

short answer. NO, you don't have to take the pistons out. You will need to replace the valves and the valve seats and get all new gaskets to put it back together.
Have a machine shop do all the work for you. They will rebuild the heads and give them back to you ready to put on. This would also be a good time to replace the cam and lifters while you have it apart.

No, you won't have to take the pistons out, however there were some engines that had the valves in the block, and that makes the job harder.
The first thing I would suggest you do is head to the library and see if they have, or can get, any manuals for your car. Study them and see if you can figure out how the engine comes apart before you actually do it.
