I would pick water because you can expand on several topics.

Like the way the water molecule works (dipole properties, etc) and how it benefits us and plants.

Water pollution or remediation (there's a TON of chemistry in this topic).

Other properties of water that make it unique like it solid and liquid properties and its "universal" solvency.

Water is really cool once you start looking at it.
