Have plenty of witnesses and film at eleven, because yes, you can say whatever you want to whoever you want to, but if you say the wrong thing at the wrong time, you're fuc ked.

Freedom of Speech, there's a topic, technically we should be free to say what ever we want, That in fact is the point. That is a hallmark of democacy. That's what make it special, We can say what ever we want no matter how heinous it is.
Next add common sense, another commodity we are in short supply of. If the cop calls you a dirty hispanic and you aren't fresh from a place where you infact became quite dirty, he'd be asking for trouble, and except for your common sense, understanding he has a gun and friends in the same uniform, there could be a fracus erupting in all kinds of free speech.
Freedom of speech has been trumped by political correctness with a side of minority rights.
The only people you can make fun of now are Christians, obese people, and dare I say white males and blonds. But you can't mention her breasts.
I'm not sure there are any rules!

The first amendment to the US Constitution reads: Congress shall make no law ... or abridging the freedom of speech ...
Your employer is not congress and firing your is not passing a law. You have the right to speak, and your employer has the right NOT to employ people that offend their customers. As for the officer, when he pulls you over, he is acting under the authority of the state. You can't be arrested for calling him names, but if you do, he is MUCH more likely to arrest you for something he would normally ignore. Whatever he originally pulled you over for can be grounds for arrest.

Businesses have the right to not allow people to say certain things while on their property. Freedom of speech only qualifies when you are on public property that is managed by tax dollars. A business has the right to fire you if you say something they feel is over the line.

Your Boss has the Right to fire you just because he wants to.
in your example your doing harm to his business.
the Cop in your example would be violating you Civil Rights, He is in a position of authority and by using such terms he is stating his Bias and showing he can not treat you or do his job fairly.
It's true we say we have total freedom of speech yet there are rules to it.
You can't injure someone with your words.
You can't yell "Fire" in a crowded space, because in doing so you are creating an unsafe environment, where others may be injured.
You can say " I hate all {insert race here}" that is not a crime, but if you say "kill all the {insert race here}" then that is inciting a riot or attempting to.

Freedom of Speech as established by the 1st Amendment to the Constitution specifically prohibts the government from enacting statutes which prohibit the free exercise of speech - nothing more, nothing less. And while this protects you from proscecution by the government for most (but not all speech - libel, sedition, etc) it does not protect you from any other consequences of your exercise of speaking your mind, like getting fired.

You have freedom of speech when it's not libelous or harmful to anyone. Your business can certainly fire you for overstepping your bounds. It would not be appropriate for a cop to use any kind of racial remarks when they're on the job. You couldn't call him anything you wanted either - it might constitute harrassment.

Our founding fathers wanted people to be able to criticize the government without being put in jail for it but thanks to idiots like the ACLU, freedom of speech has been twisted into protecting pornography. We need to step back and consider the intent of our founding fathers and not look at the constitution as if it were some sort of contract with a lot of loop holes.

legally....as long as you aren't using it to incite violence or catastrophe (yelling fire) then total freedom basically.
However....private/public enterprise has the right to set a group of rules and those who do not abide by those rules can and will be fired. Now you could techically say that outside of your work place or public business and you would only be chastised by those who didn't want to hear what you had said.
