Alarm clocks used to be spring action. They were wound up and then set. When they activated, the spring was set off and it's unwinding against a bell made the sound.
So they literally went off.

For a simple reason, from your angle to you is on, but from alarm's angle its off, just like you must have heard some man saying, that "my wife went off on me", meaning she is mad and is yelling.
