do the people they draft get to start playing right away or something or do they have to wait till next seaon?

The draft is timed to coexist with the amateur (primarily college and high school) baseball schedules, which reflect the school year. The lesser sports automatically benefit from having their championship seasons mostly concurrent with the school year already. Baseball overlaps the summer break.

Draftees who sign tend to be assigned to a team within days, so they can start (or continue) playing and getting used to their new career.

The draft happens when it does to get the young guys into the playing season right away. It's good timing because the college baseball season, except for the college world series, is done and guys are ready to turn pro.

If players are signed, they can join the organization that season, rather than having to wait until the next one. That's what I always understood was the deal with the draft's timing.
