I recently set up my LLC in CT. Both my wife and son were listed as officers in the LLC, but not as members.

I want to preserve the protection afforded to our personal assets, offered by the LLC, so should I consider removing both my wife and son as officers? If so, can I operate the LLC with only myself listed as an officer?

It doesn't matter. The LLC provides protection. And, you only need to have one person listed.
