Eggs are best when very very fresh ... but will store well for 3-4 weeks. (However I have used them after as much as 6 or even 7 weeks, albeit they aren't at their best.)

Some farms have resorted to printing expiration dates on the eggs themselves because less scrupulous distributors have been caught numerous times putting older eggs into newer dated cartons and passing them off as fresh in the hopes that most consumers won't notice (and most don't).

If you are unsure how old your eggs are ... float them in some water. A fresh egg has a very small air cell and thus the egg will just barely float or even sink. As an egg gets older the egg will float higher and higher in the water as the air cell inside the shell increases in volume over time (while the egg white also shrinks). If your egg floats more than a centimeter above the surface I'd throw them away and buy some fresh ones.

Go by the expiration date on carton. If carton is missing, fill an object twice as big as the egg with cold water. The egg should lay on it's side, if it sits up, i still use it, but only in high heat cooking. If it floats, take it outside and throw it an trash can.

Probably about a week after their sell by date - but only suitable then for using in baking. Keep your fresh eyes for things like boiled eggs, or scrambled! Older eggs are fine for batter, cakes etc.

Careful what people tell you. Someone told me a chicken would keep for months in the freezer. When I went back the next day it was dead! lol.

I keep eggs for ages.

just over 1 week, i wouldn't want to keep them in there to long, they are best to be used up!!!
