Mustard Potato Salad
3 - 4 large baking potatoes boiled, peeled, cubed.
The chopped whites of 2 boiled eggs (save the yolks)
1/4 to 1/2 cup chopped oniions
1/4 cup chopped celery
1/2 tbls celery seed
In a seperate bowl mix together:
Mayonnaise - about 3/4 - 1cup
Mustard - about 1/4 cup (or to taste)
Mashed egg yolks
Mix all of the ingredients together and add salt and pepper. This potato salad tastes even better the next day.

My best trick for potato salad is when they have been cooked as usual and just drained to transfer them in a big bowl and seasoned them (salt & pepper to taste) right away and the special touch which is a half a cup of Italian Dressing or Sun dried Tomato Dressing while they're still warm mix it with the usual diced celery and peppers. They all get cooked a bit and take the seasoning perfectly well. Put in the fridge to cool, wait a while then you can add up your hard boiled eggs, mayo and sour cream.
Now, your potato salad will have a new twist in flavor! Always a favorite at my house.

i found something for bacon ranch potato salad it sounded good to me hope u like it:
Cubed, cooked potatoes and onion are added to bacon-ranch salad dressing, prepared mustard, and (optional) dillweed. Crisp bacon is crumbled on top before tossing.
Ingredients:
1 5-lb bag of red potatoes
1 package bacon
1 large onion, cubed
1 bottle bacon-ranch flavor dressing
1 tbsp prepared mustard
1 tsp dillweed (optional)
1 tbsp mayo or salad dressing
Method
Cube and boil potatoes until they are fork-tender (do not overcook). Remove from heat and drain. Run under cool water for a few seconds and shake. Let potatoes set about 30 minutes. While potatoes are cooling, cook bacon till crisp. Add onion in the last few minutes. Remove bacon and onion with slotted spoon to drain. Let set until bacon is cool. Combine last 4 ingredients and add to potatoes in large bowl. Crumble bacon over the top and toss gently.
Notes: This dish is a great alternative to the ordinary potato salad. Definitely a big hit with guests.

Nice new spuds - peel em or not, your choice!!
Boil them for about 20 minutes until they are still firm to the touch - drain.
Meantime, mix some mayo (couple of tablespoons) with same amount of white wine vinegar in a large bowl - use a small whisk and don't panic when it separates!! Just keep going. Add some chopped onion, celery, whatever takes your fancy, then slice the potatoes up if you like them smaller or drop them in whole. Gently turn them round in the mayo with a large spoon and EAT!!!

I will give u an Indian version of potato salad
Boil potatoes peel an refrigerate mean while chop onions finely green chilly and coriander and if u like garlic just crush 2-3 pods
remove the potatoes from the fridge chop and chopped onions and other chopped things squeeze lemon add rock salt and toss well

boil your potatoes until able to stick a fork in them, drain and cube or leave whole if smallish, add some chopped onions, eggs, celery, garlic and if your in my house, some chopped pickled or fresh jalapenos. In small bowl mix some mayo, a little mustard, and a touch of vinegar along with any seasonings you like, I prefer garlic and dill weed. Mix this well and pour over potatoes toss to coat and refrigerate until time to serve.

boil potatoes,peel when done,add diced green onions,diced pickles, shredded carrots,2 hard boiled eggs diced,mix with mayonaise a bit of musterd,and a little pickle juice,salt and pepper.
when done sprinkle top with some paprika powder.
