I made wine with yeast,and orange juice..I believe I made it last night or 2 nights ago..It's very fizzy and tart now..when can I drink it,and how do I know when it is done?

ITs very fizzy right now because the yeast is still reacting with sugar in the juice to produce the alcohol. Both Alcohol and CO2 (thats what your bubble are) are produced during fermentation. I used to ferment wine this way, except with welches grape juice, fermentation usually took about 2 weeks, and i usually bottled it after that and let it sit for another 2 weeks, and it tasted fine. If you are using wine making yeast your fermentation time may be a little less, you can pick up that at any homebrew shop heres a link to a page that you can use to find a homebrew shop near you : http://beeradvocate.com/beerfly/ simply click a location near you and then click on the top where it says "Homebrew shops." If you use wine yeast your finished product will taste remarkably better, and its not that much more than yeast you get at a grocery store (and if your under 21 you dont have to be 21 to buy wine yeast...atleast not here in Wisconsin).

If you "believe" you made it last night or two nights ago, you made (and drank) too much.
