Salmon is pink, swordfish is white.

A salmon filet looks like an Omega symbol. A swordfish steak is flat.

A filet is a cut down along the ribbones so as to keep the filet boneless. A steak is a crosscut of a fish thereby geting some ribbones in it. And as for salmon over swordfish? I've eaten lots of salmon but never a swordfish.

Well they're different fish - ok sea and fresh water salmon, and sword fish ... apart from the cut of the flesh ....

For either, I guess you mean the way you cut the flesh? Steak is cut vertical spine facing you, filet is lying the fish on a side and carefully slicing away from the spine on the lateral

Fish steaks are cut through the body of the fish giving a cross section. It includes the backbone and ribs.
A fillet is cut longitudinally along the backbone and ideally does not have bones. It may or may not have the skin attached.
