Yes, in most states it is what they will call a Class II felony since it is recognized as a weapon. An assault with a gun is always a Class I felony and some states will recognize it as a Class I felony. Depending on the class, (which most states have three of) determines the sentencing guidelines the judge should use. If he did a lot of injury to someone they can attach a harder sentence to it and that's sometimes where you hear "great or grievous bodily harm" and the justification for a harder sentence even though it may be a lower class felony.

Yup, I'm told that in some states, nunchucks are considered as deadly weapons, although the idea of being arrested for possession or carrying nunchucks is a bit too much in my opinion, for using it maybe, but possesion? After all, in some states, trying to run a person down with your car is considered an attack with a deadly weapon, so how come no one ever gets arrested for possessing a car? : P

Back in the 70s there were a couple of high-profile robberies and deadly assaults using nunchucku. Some states like California and a couple of others made posession a felony although you could keep them at a licensed school. All states consider them a deadly weapon the second you hit someone with them. Baseball bats are considered sporting equipment UNTIL you hit someone with it, then they are a deadly weapon too. Common sense really.
Bigger question is why did your ex actually use them on somebody?

If they were used to harm somebody yes. Any thing can be considered a weapon if used to do harm. In some states the mere possession of such weapons is a felony. Also, if a person holds a black belt in the martial arts the hands alone are considered a deadly weapon. And the use of a deadly weapon is most definitely a felony.

It is generally considered assault with a deadly weapon if you attack someone with nunchucks. Obviously there may be other charges depending on severity and brutality of the attack. That said I am not a lawyer, so your mileage may vary.

Yes, the term is "ADW". I assume he used it on someone's noggin instead of a tackling dummy, right?
