I've seen multiple jungle military figures (particularly in Vietnam and on SEALs) wear do-rags or something on their head. Do they have a specific name? Are they in use?

Scarf or Bandana, the wearing of them became very popular in the Vietnam war, the Americans copied this style from Australian and New Zealand Special Forces (SAS) operating in Vietnam.

In the jungle the bandana was found to be very practicle, it kept the sweat out of the eyes, stopped ants and insects getting into the scalp, kept the tips of the ears covered as protection from Elephant Grass and bamboo splinter cuts.
Offered very good camo possibilitys, it was also easy to wash and dry, and could be worn around the neck, pulled up over the face, provide a shade from the sun when tied over a lying up postion, some of the net types were even used as fishing nets!!

It also could be used as a sling for injured arms

Looks like the scarf we were issued in DESERT SHIELD. Wrap it across your face to stop some of the dust and sand or over your head to block the sun and soak up sweat. That last one is really important. Having a really salty drop of sweat get in your eye at a critical moment when you absolutely have to see clearly is a BAD THING.

The scarf we got looked like heavy tee-shirt material, light brown, about 1 foot by 3 or 4 feet. Had a regular tag like any other issue item.

It's not authorized but when the fight is on who cares about regulations? Main thing is to blend into your environment.

No idea, I call them bandanas. But they do look cool.
