Roasted corn salsa with Grilled chicken soft shell tacos.
Make a homemade salsa using 1 ear of corn, fresh cilantro, 1 Anahiem or Poblano pepper, 3 roma tomatoes, 1 small sweet onion, lime juice, and cumin. Shuck an ear of corn. rub alittle butter on it and put it and the pepper on the grill. Turn the corn often so that it cooks on all sides. Do the same with the pepper. It takes about 10 minutes to grill the corn. The pepper is ready when the skin had black blisters on it. Place the pepper in a plastic sandwich bag. Let the corn cool until you can handle it.
Peel and deseed the pepper. Chop the pepper and all of the other ingredients into small pieces, Cut the corn off the cob. Mix all togther and squeeze the juice of 1/2 of a lime over the mixture, add 1 tbsp of cumin powder and the chopped cilantro. Stir well and chill.
While the salsa is chilling, grill chicken breasts for tacos.
While the chicken is grilling, shred fresh lettuce, chop tomatoes, and slice an avocado.
When chicken is done, let it cool for a few minutes. Then slice chicken into even pieces. Heat tortilla shells in a wet paper towel for 1 minute until heated.
Assemble taco with all ingredients and top with sour cream. Serve with roasted corn salsa.

Well, I'm always in the mood for Cornflake Chicken with gravy and mashed potatoes or rice.

This is what we're having:

Tangy Honey Glazed Pork Roast
Baked Potatoes/Sweet Potatoes with butter, chives, cheese and Bacos
Roasted Tomatoes with Parmesean and Thyme
Strawberry Cobbler with Vanilla Ice Cream


Cornflake Chicken:

1/2 Cup Milk
2 eggs
Cut up chicken or chicken breasts
Salt and pepper to taste
Regular corn flakes (crushed a bit)
Melted butter

Beat egg well. Stir in milk. Dip chicken in milk and egg then roll in corn flake crumbs. Place in foil lined pan. Drizzle with melted butter. Bake at 375 degrees for 1 hour.


Tangy Honey Glaze:
1 1/4 cups packed dark brown sugar
1/3 cup pineapple juice
1/3 cup honey
1/3 large orange, juiced and zested
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves

Heat altogether in saucepan, dump half over roast/ham, baste with the rest every 10 minutes

we had this so:
Cannelloni with fresh Spinach, Cheddar and Basil

Ingredients:

* 6 sheets of fresh Lasagne
* 200 g fresh Spinach leaves
* 500 g mild Cheddar, coarsely grated
* 500 g Basic tomato sauce/ Ready made Napolitan sauce
* 1 tbsp chopped Basil
* 2 cloves Garlic, finely chopped
* 1/2 tsp Paprika powder

Method:

* Preheat the oven to 200 C/ gas mark 6.
* In a large bowl, mix cheddar, garlic, spinach and basil together. Season and sprinkle with paprika.
* Put 2 tbsp of cheese mixture in each of the lasagne sheets, then roll them into a tube.
* Pour a layer of tomato sauce at the base of an oven proof baking dish and lay lasagne rolls side by side in one layer.
* Pour another layer of tomato sauce over cannelloni tubes and sprinkle with grated cheese.
* Bake in the oven for 25 minutes.

Make a nice chef salad with two kinds of lettuce, tomato, cukes, onions, sliced cooked eggs, sliced radishes, black olives, green pepper, cauliflower, brocolli, sliced cheese and either sliced ham or cold shrimp or crag. Also don't forget the hard rolls and real butter. Have thousand island or ranch on the side. And serve with ice tea or soda.

BEEF TIPS & NOODLES

Good sized sirloin tip steak, cut in cubes
3/4 c. water
2 tbsp. beef base
1/2 c. red wine
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. thyme
1 tbsp. cornstarch

Brown meat in pan. Bring other ingredients (except cornstarch) to a boil in separate pot. Lower and thicken with cornstarch. Pour sauce over meat in casserole dish. Place in oven at 300 degrees for 3 hours or until meat tender. Serve with noodles or rice if preferred.

BABY SPINACH SALAD

1/4 c. olive oil
1/4 c. 7 up or ginger ale
1/4 c. balsamic vinegar
1 T. Dijon mustard
1 tsp. pure vanilla extract
1 tsp. orange zest
1 T. orange juice
1/2 teaspoon freshly grated ginger
salt and pepper to taste
pinch red pepper flakes


Whisk ingredients together and toss with baby spinach or mixed baby greens.
