Grilled Balsamic and Basil Potatoes
Ingredients
1 - 2 lbs. unpeeled cubed baby red potatoes
2 tsp. Garlic Garlicâ¢
2 tsp. Onion Onionâ¢
5 Tbsp. Balsamic & Basil Dipping Oil
1 Tbsp. butter
Directions
Combine first 4 ingredients; place on greased foil. Top with butter; fold foil around potatoes. Place on hot grill for 20-25 minutes or until tender. Makes 4-6 servings.

First i must say kabobs are difficult because they never cook easily. But, if you would like something cold as a side dish i would choose something like a side salid with a vinagrett or possibly a bean salid seeing as how you would have to save in the kitchen for some time to make a macaroni / pasta salid or potato salid.

My favorite side with kabobs is fluffy buttered rice and some hot garlic bread.
Another good option is canned whole potatoes on skewers--you can cook on the grill along with the kabobs.

--Couscous Salad Recipes
Ingredients:
2 cups quick-cooking couscous
1 3/4 cup boiling water
2 cups romaine, sliced
1 cup diced, cored plum tomatoes
1/2 cup minced curly leaf parsley
1/3 cup thinly sliced green onions
1/4 cup chopped fresh dill
2 tablespoons chopped fresh mint
2 ounces feta
***DRESSING***
1/4 cup olive oil
1/3 cup lemon juice
1 tablespoon cold water
1 crushed clove garlic (I think more is better)
1/2 teaspoon salt
Directions:
Place the couscous in a large bowl and cover with the bowling water. Cover the bowl and let stand 10 minutes. Fluff with a fork and let cool completely. Add remaining ingredients and toss with dressing.
For the dressing: Whisk oil, juice, water, garlic and salt in small bowl until blended. Taste and adjust seasoning if necessary.
When I make this, I garnish the salad with additional tomatoes, Greek olives and more crumbled feta.

Well, that sounds yummy. Anyway, when my family had kabobs on Thursday my mum made it with cold pasta on the side. Not the kinds that are heavily dressed, just the light ones.CHEERS!

Those kabobs sound delish! Some starch dish to go with them, I'd recommened. How about potato salad or a pasta/macaroni salad?

Sounds yum. My first suggestion would have been rice, but if you want something cold, this is delish. I like to add sliced red onions & black olives to mine...
Watermelon & Feta Salad :
¼ seedless watermelon, diced (about 4 cups)
1 cup salty feta cheese, broken into teaspoon-sized lumps
¼ cup chopped fresh flat leaf parsley
excellent quality extra virgin olive oil – to drizzle on top
salt and pepper to taste
Toss watermelon, feta and half of parsley on a platter or in a wide fairly flat serving bowl. Top with remaining parsley, oil and salt and pepper. Serve on watermelon “plates” or eat with your fingers, right from the serving dish.

How about some grilled corn on the cob?
Corn on the cob with husks on
Butter(stick works best)
Aluminum foil
Pull back small amount of husk. Put small amount of butter on corn. Put husk back over corn. Wrap in foil. Put on hot grill turning once in a while. Leave on grill 15-30 min. Corn will be very hot, so be careful when husking!

Salads with vinaigrette dressings would be good side dishes,.....
tomato/mozzarella/basil
cold rice salad w/ tomato/black bean/cilantro
regular old potato salad
cole slaw
mixed fruit salad (melon, nectarine, cherries, grapes, strawberries, etc....)
corn on the cob (can make on the grill, wrap in foil)
steamed asparagus (you can grill it too, yummy! just drizzle with olive oil and add salt n pepper)
baked potatoes made on the grill (wrap in aluminum foil)
