Technially Jesus didnt start a church, He started a religion. Peter is the guy that crafted services out of what Jesus said. There are letters about it

Read 1 and 2 Peter in the bible
Peter didn't start the church either he just lead on what Jesus started
it talks about the the church and were he and the apostles went to all over to start it, it talks about the the struggles the church went through and mentions things about the church directly about a dozen times, it actually says things using the exact words "church".
I also think that the Sea Scrolls talk about the first years of the church
There has been evidence of Mass being celebrated at 140 A.D. the generation between Peter and The people of 140 A.D. told the next generation about Peter and then so did the next Generation, up until this very day

Hope it helped

The catholic church has been built on man, but not on the doctrines that Peter would have preached about. Peter also said "Repent and be baptized" Acts 2:38. How many infants know how to repent? Look at Lev. 26:1, and when your told that they don't worship idols, asked them why the statue of Peter recently had need of repairs at the Vatican. His toes had been kissed off. It was on Peters confession that Jesus was the Christ, the Son of the living God that the Protestant Churches are based upon, For other foundation can no man lay than that which is Jesus Christ.

Catholics do not say Peter is the person who started the Catholic Church. Properly speaking it was the Holy Spirit at Pentecost Who started the Church. Peter however was clearly instructed to "feed my Sheep," and given the "Keys of the Kingdom," and only Peter was given this role. Further, he was told whatever you bind on Earth is bound in Heaven and whatever he loosed on Earth is loosed in Heaven.

If you go beyond the scriptural verses you have tons of early writings that make clear that the Church of Rome was considered the successor Church by Peter's martyrdom there as the successor bishop to Peter's role. Even parties considered heretics appealed to Rome not doubting such a role.

It is instructional that the readings for the feast of the Chair of Peter only uses readings describing sinning, failed anointed of God. I suggest you actually learn and understand the actual Catholic teaching on the Papacy.

There are two really good books, "Why Do Catholics Do That," I believe by Kevin Orlin...maybe Orlen...and "Home Sweet Rome," by Scott and Kimberly Hahn, who were evangelical theologians.

So the error is in thinking Peter started the Church, in Catholic teaching, Christ organized it and gave it form and it was born from the Spirit.

Jesus started the Church.

Jesus also appointed Simon as the head of the church on earth, when he gave him the new name of Peter, which means "rock" and said "On this Rock I will build my church."

The church, and the whole world, never disputed this fact, for the first 1500 years of modern world history. Look it up.

And in spite of the late day reformers and revisionists who try to deny the fact, the Pope remains as the only living link to Christ, holder of the unique office that Jesus established and staffed while he was still alive on this earth, by the authority of God, that no temporal authority, and no man has the power to tamper with.

Even Hitler, who carted off and killed millions from all over Europe, couldn't invade the 100 acres of Vatican territory, defended by only 220 Swiss Guards, even though he desperately wanted to do so.

Interestingy enough, in the middle of the 20th century, the bones of St. Peter were indeed found buried in an ancient cemetery that was located underneath the foundation of the basilica that was named for him, in the Vatican, proving that Jesus wasn't kidding when he said he would build his Church on Peter, the Rock, and also proving that the builders of the original St. Peter's (back in the 4th century) knew full well, and beyond a shadow of a doubt, that St. Peter was the first Pope!

I am not Catholic, but I do know a little of what they base it on. The Catholic church teaches that Peter was the first pope because of Jesus promise to him that "upon this rock I will build my church and the gates of hell will not prevail against it. The Catholic church believes it is the church meant by Christ in that passage.

I assume you then believe it was founded by Constantine in the 4th century. The fact is we have no evidence of a feud between the Church that had been between Constantine's form of Christianity and the existing form, thus we can assume that Constantine did not begin a new religion, he simply made the existing faith (the Catholic Church) legal.

Also in a letter in the 2nd century an early church father uses the word Catholic to describe the Church.

There is also a traceable line of popes back to Peter.

You are misinformed. Jesus Christ founded the Church. Simon Peter didn't found anything. Christ, after founding the Church, appointed Simon Peter to a role of headship over that same Church, and equipped him for that special ministry by giving him special charisms - the gift of infallibility ("whatsoever you bind upon earth is bound in heaven") and full authority (the keys to the kingdom). Ever since that moment, Simon and his direct successors have exercised that same ministry, with that same authority, in Jesus' name. Which is the principle reason the Church founded by Christ remains united after 2,000 years while manmade tradition which has rejected this God-given authority has self-destructed into thousands of unauthorized, conflicting denominations in a few hundred years, and continues to fragment further with every passing year. The stated will of God is "that they all may be ONE". God provided the means of fulfilling His holy will. Outside His plan, His will cannot be realized.

you say 'other than the bible verses' but my question is - if one is going to use a 'document' or something like this as a foundation for a church - what should one use if not the bible?

Catholics do not say that Peter is the person who started the Catholic Church.

Jesus and the Holy Spirit started the Church.

Peter was the first Pope.

John 21:15-17 states:

When they had finished breakfast, Jesus said to Simon Peter, "Simon, son of John, do you love me more than these?" He said to him, "Yes, Lord, you know that I love you." He said to him, "Feed my lambs."

He then said to him a second time, "Simon, son of John, do you love me?" He said to him, "Yes, Lord, you know that I love you." He said to him, "Tend my sheep."

He said to him the third time, "Simon, son of John, do you love me?" Peter was distressed that he had said to him a third time, "Do you love me?" and he said to him, "Lord, you know everything; you know that I love you." (Jesus) said to him, "Feed my sheep.

Matthew 16:17-19 states:

Jesus said to him in reply, "Blessed are you, Simon son of Jonah. For flesh and blood has not revealed this to you, but my heavenly Father. And so I say to you, you are Peter, and upon this rock I will build my church, and the gates of the netherworld shall not prevail against it. I will give you the keys to the kingdom of heaven. Whatever you bind on earth shall be bound in heaven; and whatever you loose on earth shall be loosed in heaven."

The Catholic Church believes the Lord made Simon alone, whom he named Peter, the "rock" of his Church. He gave him the keys of his Church and instituted him shepherd of the whole flock.

The Pope is the senior pastor of 1.1 billion Catholics, the direct successor of Simon Peter.

The Pope’s main roles include teaching, sanctifying, and governing.

With love in Christ.
