I'm looking for sides (with recipes) to go with a pork roast I'm making tonight.

The thing is, it's a Tangy Honey & Peach Glazed Pork Roast. That's why I'm having such difficulty deciding what type of side to go with it.

And no rice or mashed potatoes. If I have to eat either of those as a side one more time this week.... well, let's just say it's not going to be pretty...

Noodles a la Pepper

1 package of three-peppercorn noodles
½ cup grated cheddar cheese
¼ cup parmesan cheese
½ teaspoon cayenne pepper
1 teaspoon seasoned pepper
½ - ¾ stick of softened butter

Cook noodles, and drain. Pour noodles in a microwavable bowl. Butter noodles, add remaining ingredients, and toss. If the noodles are not melting the cheese, microwave for a couple minutes.


Courtneys Amazing Pasta

olive oil
1 bag of spinach
1 tomato
1 bag of your favorite macaroni
1 cup of your favorite cheese (parmesan recommended)
fresh ground sea salt and fresh ground pepper
basil for garnish

Boil pasta to directions on box in a frying pan drizzle olive oil in pan and turn to medium then add spinach, tomato, diced, and fresh ground salt and pepper. After the pasta is finished strain it and add it to your frying pan. Sauté and add the cheese and garnish with basil.


Butternut Squash Mac and Cheese

1 pound macaroni with lines, such as tubatini or mini penne rigate
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 tablespoons butter
1/2 medium onion
2 tablespoons chopped fresh thyme leaves, plus a few sprigs for garnish
3 tablespoons all-purpose flour
2 cups chicken stock
1 (10 ounce) box frozen cooked butter nut squash, defrosted
1 cup cream or half-and-half
2 cups (8 ounces) sharp Cheddar, grated
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
1/4 teaspoon ground nutmeg, eyeball it
Black pepper

Heat a pot of water to boil for the pasta. Salt the water then add the pasta and cook to al dente or, with a bite to it.
While pasta cooks, heat a medium heavy bottomed pot over medium heat. Add the extra-virgin olive oil and butter. When the butter melts into the oil, add the thyme and grate the onion directly into the pot with a hand held grater or Microplane. Cook the grated onion in butter and oil 1 to 2 minutes, then add flour and cook together 1 to 2 more minutes. Whisk in stock, then combine with butternut squash until warmed through and smooth. Stir in cream or half-and-half and bring sauce to a bubble. Stir in cheeses in a figure 8 motion and season the completed sauce with salt, nutmeg and pepper. Taste to adjust seasonings.

Drain cooked pasta well and combine with sauce.

I think a green salad with crumbled blue cheese and walnuts. The tartness of the blue cheese will compliment the sweetness of the glaze.
Roast some new potatoes. Wash and cut potatoes into quarters. Place on a baking sheet, drizzle with olive or canola oil, season with garlice, salt, pepper, and rosemary (or you could sub basil, oregano, or thyme if you don't have rosemary). Then roast in a moderate oven until golden brown. Turn the potatoes are they have browned on one side. You can also add onions to the pan mixed in with the potatoes.

Baked sweet potatoes, steamed green beans (or sauteed with butter and garlic), a garden salad, and dinner bread (recipe below) (served with honey butter)

Dinner bread:
1 cup lukewarm water
3 tablespoons honey
1 1/2 tablespoons molasses
1 tablespoon butter
2 teaspoons salt
2 Tbsp. cocoa powder
1/2 cup ground flaxseed (optional)
3 cups all-purpose flour
2 teaspoons active dry yeast

Mix water, honey, molasses, salt and yeast. Let sit until bubbly. Mix dry ingredients together in a bowl. Add half of dry ingredients to wet and mix well with an electric mixer or wire whisk. Add remining dryingredients and knead well. Shape into 1 regular sized loaf or 3 mini-loaves and place in a greased bread pan. Let rise in an oven set to 180 degrees F (or a warm place) until bread is doubled in bulk. Bake at 350F for 30 minutes. Let cool 5-10 minutes. Serve warm.

What a great question you asked!! I will give you recipes that I use for my clients to go with our apple brined pork loin.

Twice baked sweet potatoes
Fresh sweet potatoes-washed with skin left on
1 T. butter or margerine per potato
1 t. brown sugar per potato
1T. heavy cream per potato
1 T. Maple sugar (the real deal) per potato
Allspice and ground cloves, salt and pepper to taste

Bake potatoes on 375 for one hour or until a tooth pick inserted into the center still feels resistance.

Remove from oven and using a hot pad or glove to hold them, split the tops carefully. Put all other ingredients in a large bowl and spoon warm potato meat into bowl. Mix all together but leave some lumps for texture. Carefully spoon mixture back into potatoes and bake for 30 minutes--serve immediately OR cool them down at this point and put in fridge for use the next day OR put in Zip bags, press out the air and freeze for up to one month.

Fall Fruit Compote for four
2 cans of fried apples or 2 apples sliced and sauted in butter
1 cup of dried apricots, cut into three pieces per fruit piece
2 fresh pears, peeled and sliced into cold water
Apple jelly and 1/3-1/2 cup of Captain Morgan's spiced rum
Cinnamon and nutmeg to taste

Simmer the apricots in the rum and spices, add 1/3 cup of apple jelly. When the apricots are fork tender, add apple slices. About 15 minutes before serving, add the raw pears slices and cook mixture just until the pears are tender. Use as a side dish or over the pork. Add water if sauce is to thick. Add a bit of cornstarch slurry if sauce is to thin.

Hint: Buy extra sweet potatoes and bake them but only use the meat if you want your potatoes extra plump.

well we like potatoes with everything, just change them a little. potatoes with gravy is nice, and so are fluffy mashed potatoes with lots of milk and butter in them then drop on tiny pieces of american cheese and bacon. You can always make a tasty bread (nut bread or banana bread with Philadelphia cheese balls). Or you can forget the side dish and add a different kind of dessert like tapioca or pudding. Why not try something different like beets, or a red spiced apple with phillie cheese in it on lettuce. Or have some maccaroni salad, shreaded cabbage with carrots and mayo, or deviled eggs.

Baked sweet potatoes and creamed spinach would be perfect. Look for a recipe that is not complex (it doesn't have to be difficult to be good). I have these two sides every time I grill pork chops.

Fried cabbage or brussel sprouts, asparagus or green bean casserole. You may also want to add jellied cranberry sauce slices. The tanginess will compliment the sweetness of the roast, which by the way sounds delicious!

You know those apples that they have at Boston Market with the sweet glaze? It's like apple pie filling. It goes great with pork. Corn bread is delicious, and you don't even have to bother making it, just buy it!!!

how about some honey and dill glazed baby carrots. they are easy and taste so good. just steam the carrots and then top with some dill and a dollop of honey and a spoonful of butter.
asparagus could be made this way too.

Roasted sweet potatoes, baby peas with sauteed onions, sliced tomatoes with garlic, salt, and pepper, hot rolls.
