Caprese Stuffed Chicken Breasts
Serving Size : 4
4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup sun-dried tomatoes, oil-packed -- drained and chopped
4 ounces mozzarella cheese -- packed in water
1/4 cup fresh basil leaves -- chopped
2 tablespoons olive oil -- *see Note
1 teaspoon olive oil
4 cups mixed salad greens
3 tablespoons red wine vinegar
4 teaspoons chives -- chopped
1/2 cup seasoned croutons
*2 tablespoons plus 1 teaspoon olive oil, divided
Spray 9x9x2 baking pan with cooking spray. Flatten each chicken breast half to 1/4-inch thickness; sprinkle with salt and pepper. Place equal amount chopped tomatoes in center of each chicken breast half. Cut mozzarella cheese into 4 equal portions and place on chicken. Top with equal amounts basil leaves. Roll chicken, folding in sides; fasten with wooden pick.
Place in prepared pan, seam side down; drizzle 1 teaspoon of the olive oil over chicken and bake in 375degree F. oven for about 30 minutes or until fork can be inserted in chicken with ease. Remove picks from chicken.
Place salad greens on serving platter. Cut each piece of chicken into 5 or 6 slices and arrange on greens. Mix remaining 2 tablespoons olive oil with vinegar and drizzle over chicken. Sprinkle with chives and garnish with croutons.

My absolute favorite website for recipes is allrecipes.com. You can search by ingredient: say all you have on hand is some canned tomatoes, onion, and ground beef; you can enter those ingredients into their "ingredient search" and it will show you recipes that use them. It's a pretty popular site so a lot of recipes are are rated. I generally only try recipes that have an overall star rating of 4 or higher, and that have been reviewed by at least 20 people.
If I knew what you were in the mood for, I could give you a dozen ideas. If you want healthy, soups, quesadillas, and pasta dishes might be good, easy options. Good luck!

Read recipes with ginger in it question for my salmon linguine recipe. I also have a new great recipe for summer. Eggplant rigatoni and is it ever good. Cut on the diagonal 5 sweet italian sauggages in the cassing. Chop up 2 garlic whole, 1good size onion chopped, 1 egg plant cut across length (don't peel) then cut each half again length wise, then chopp up2inch pieces. These are good even larger chopped. Then in two pans, 1st pan sautee in olive oil garlic and onion, second pan sautee in olive oil sautee egg plant, not all the way done but 1/2 done.Take out and put on paper. Then throw in sweet Italian sauggages and oil and cook only till brown, put on paper, To the now sauteed garlic and onions add 1 14 ounce can of crushed tomatoes and 1 can of hunts 4 cheese spagetti sauce, cook till hot. turn off. Ok now layer ina 12 by 13 pan rigatoni (cooked) then sprinkle with morzrella, parmesam cheese , sauggage, eggplant, and sauce, layer till all is used. 350 bake 1/2 hour Its so good!

Try Food Network website it has all the different chefs with all kinds of recipes to choose from, most are quite healthy. My favorites are Rachael Ray and Paula Dean, and Semi-Homemade with Sandra Lee. If you like Italian food, Everyday Italian with Giada De Laurentis is great. Also all of these recipes are very easy to make. I have made quite a few of them, and they are really good. Happy taste buds!

Jambalya:
1 lb chicken
1 pkg polish sausage
1 bag shrimp
6 serv rice
2 can diced tomatoes
1 can chx broth
1 onion
minced garlic
dash cayanne peper
cook meat in a pan with onion and garlic add rice, tomatoes, broth and seasoning
boil til rice is done. Add a second can of broth if no liquid left.
Chicken Chili:
1 lb Chicken
1 can chopped green chilies
1 onion
1 can diced tomatoes
4 cans beans (white bean assortment - your liking)
2 cans chicken broth
minced garlic
cook chicken and onion and garlic, dice or shread chicken and other ingredients cook
top with cheese
Homemade Egg Rolls:
Shells (reciept on back)
shreaded cabbage (bag of shreaded coleslaw)
bean sprouts
chicken or shrimp (or not)
soy sauce
Tbl spn sugar
1 tsp pepper
cook chicken, shread
add other ingredients, cook 10 mins.
heat pan of oil (to fry) or oven (to bake)
spoon stuff in shell wrap and cook
These are my favorite to make and eat...AWESOME!

We are having steak on the grill, baked steak fries, potato salad, homestyle beans, tomato salsa, and a side lettuce salad. To drink, homemade lemon aid with just a little fresh raspberry to kick it up a notch. Cold watermelon for desert! Bon appitite!

When I was prego I cooked a lot because I was always hungry. I like either www.kraft.com they have tons of things that are easy, quick and good for you which is what you need. or try the food network website at www.foodnetwork.com they have some harder things to make though.

Curried Prawns on brown rice.
Slowly cook the prawns in small amount of butter and garlic. A simple curry adds a wonderful flavour. (Curry with sour cream is my fav)
