I have a lot of fresh ginger at home and need some good BAKING recepies.

My son tommy loves salmon linguinie recipe. Feeds four. grate peeled ginger about 1/2 cup at least, chop 2 whole garlics, sautee in 1/2c oil for two minutes, put salmon skinside up ontop of garlic and ginger keep slow, med. low frying, put lid on to loosen up salmon skin for a while then pull off skin with a fork, discard (igive to the dog). pull apart salmon, taking out any bones, put 1/4c mirin, 2T rice wine vinegar, and 1/2 cup soy sauce. when salmon is flaky and all is heated thru stir and spoon over #7 linguinie (already boiled) This is quite excellent, and low calorie, and good for fish haters. I serve with a cucumber salad (japanese style) It makes a great dish cold the next day for work too.

Here's my favorite:

Finely dice your ginger.
Cube (coarsely chop) any leftover fresh vegetables you have.
Place all in foil with a drizzle of wine and extra virgin olive oil.
Wrap the foil and bake for 20 minutes.

First you'll have to grind her up, perhaps debone her first, after that treat her like hamburger!....Oh, baking recepies...SORRY

ginger cookies

INGREDIENTS
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons grated fresh ginger
3/4 cup butter, softened
1 cup white sugar
1/4 cup molasses
1 egg
1 cup white sugar

DIRECTIONS
In a large mixing bowl, combine flour, soda, and salt. In a separate bowl, beat ginger, butter, and 1 cup sugar until light and fluffy. Beat in molasses and egg. Gently fold in flour mixture until just combined. Chill for 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
Roll dough into 1 1/2 inch balls and then roll them in sugar. Place 2 inches apart on ungreased baking sheets.
Bake until edges start to brown, about 15 minutes. Centers will be slightly soft. Let stand on cookie sheets 1 minute and remove to racks to cool completely.
