It used to be Mozzerella, I used to eat it by the pound but lately I prefer the sharper cheese Colby or Cheddar Sharp.
Your taste buds change as you get older.

There's a local Italian salumeria in the village down the hill from me that makes their own fresh mozzarella every morning.
My favorite is they they take the little curds and make knots out of them and you buy them in a tub of salt water. They aren't supersoft like some fresh mozzy's but rather have a wee bit of bounce that's very pleasant; a great 'mouth-feel.'
That and some fresh sliced tomatoes from the local farmer, a sprinkling of sea salt and a glass of sweet tea and I'm in heaven!

How long is a piece of string?There are many delicious cheeses but it depends what you are looking for.........soft and creamy, hard and salty, skin that you can eat or skin to peel away, sheep cheese, goats cheese or cow cheese.
Take your pick I love them all.
