I split it. "Thank you, but no."

A "No, thank you for asking." Is the overly propeer response. If in normal conversation "I'm good." comes out, that is also realativley acceptable. Just judge it by the context.

I always say "I'm fine," but people always misinterpret what I say and ask me again.
Talking about misinterpreting, I got asked at work whether I wanted a piece of chocolate cake, I said "I'm fine," and then they brought me a piece. I actually found it quite insulting, but I think i'll say "No thank you" from now on..

How you say it typically matters more than what words you use. If you say it nicely, with a smile and in an appreciating tone, it doesn't matter.

Defiantly, No Thank you is the appropriate way.
Maybe even adding a Thank You for asking, or something similar.

No thank you, No to the request, thank you for asking though. Always thank anyone who offers to assist you or give you something, whether you accept or not.

No Thank You would be the more "proper" response.

Just say I'm ok thanks for asking or offering, but "No thanks" or "I'm ok" is perfectly fine. If someone seems upset then I would say its their problem. OK?
