I want to try something new for dinner tonight. It is for a family of four, has to be really easy, preferably not with meat and only take 2 hours or less to make. Also, it would be super if it was really good and kid friendley if you get my point.

black bean and salsa wrap

all it takes is a can of black beans, a jar of salsa, shredded cheese, and tortillas (I prefer tomato and basil wraps). Just heat up the beans and salsa together in a pan, prepare the wraps, put a few spoonfuls of the mixture in the wrap, and top with some cheese. Fast, fun, and healthy! It is easily customizable to your own preferences, too!

How about 20 minutes to make:

Bean Tostadas........

Can(s) of Refried Beans
Tostada Shells (near the taco shells)
Chopped Lettuce
Chopped Tomatoes
Shredded Cheese
Salsa, if desired

Heat the beans, and put the rest of the items in bowls, buffet style and let the kids build their own, then the game begins:

You need to see who can eat the whole tostata with only one hand without putting it down or having it break over the plate.........this one was great with my kids......

My favorite website for recipes is Epicurious.com. They have an advanced search feature that will let you specify recipes that are quick, meatless, use only one dish, etc.

I would make Pasta Primavera. There's a link below, but you can substitute just about any vegetables in it. Leave the vegetables in large chunks so your kids can pick them out and just eat the pasta, if they want.
