Spinach puff pastry quiche

ingredients
1/2 17 1/4-ounce package (1 sheet) frozen puff pastry, thawed
1 3-ounce package cream cheese, room temperature
1/3 cup half and half
3 eggs
1 10-ounce package frozen chopped spinach, thawed drained
1/2 cup grated cheddar
1/4 cup grated Parmesan
2 green onions, sliced
1/4 teaspoon salt
1/4 teaspoon pepper
preparation
Preheat oven to 425°F. Roll puff pastry to 11-inch square. Transfer to 9-inch diameter glass pie plate. Trim edges. Beat cream cheese in medium bowl until smooth. Gradually beat in half and half and eggs. Mix in remaining ingredients. Pour mixture into prepared crust. Bake until crust is golden brown and filling is set, about 25 minutes. Cool 10 minutes before serving.

These delicious puffs are fairly easy to make and look elegant when serving.

INGREDIENTS
1 sheet (from a 17-1/4-ounce package) frozen puff pastry dough, thawed
1 package (12 ounces) frozen spinach soufflé, thawed
1 egg, lightly beaten
Grated Parmesan cheese

DIRECTIONS
1. Preheat oven to 350F.
2. Unfold puff pastry sheet and cut lengthwise into three equal rectangles. Cut each rectangle into four equal pieces. Place on an ungreased baking sheet and bake 20 to 25 minutes or until golden brown and puffed.
3. Remove tops from puffs and pull out soft dough. Fill each rectangle with about 2 tablespoons of softened soufflé. Replace tops and brush with egg. Sprinkle with Parmesan cheese. Bake for 20 minutes.
4. Remove from oven and let cool slightly. Cut each puff in half diagonally. Serve warm.

SPINACH PIE PERFECTION

Pepperidge Farm puff pastry sheet, thawed

Roll out and put in 9 or 10 inch pie pan.

FILLING (In blender) :
5 eggs
1 (3 oz.) cream cheese
1/2 lb. grated cheddar cheese
2 tbsp. green onion, chopped
1/2 tsp. salt

To this add: 1 (10 ounce) package frozen spinach, thawed, squeeze out water. Put in pie crust and top with Parmesan cheese. Bake at 425 degrees for 15 minutes until set. Serves 6 for lunch as entree.

Spinach Puffs

2 10 oz. pkgs. frozen chopped spinach
2 c. crushed herb seasoned stuffing mix
1 c. grated parmesan cheese
1/4 t. nutmeg
6 eggs, beaten
3/4 c. butter, softened

Thaw spinach, drain and squeeze. Mix spinach with remaining ingredients. Shape mixture into balls. Refrigerate for one hour or more. Bake 10-15 min. at 350. Remove from oven and drain on paper towels.

SPINACH PUFF PASTRY

*SORRY THIS RECIPE DOES NOT HAVE GARLIC IN IT, BUT I'M SURE THAT YOU COULD ADD MINCED GARLIC (TO YOUR TASTE) AND IT WOULD BE VERY GOOD.

Serving Size : 1
Preparation Time :0:00

1 Pkg frozen chopped spinach
1 md Sized onion (chopped)
2 Green chillies (chopped)
1 Pkg philly creamy cheese
1 Pkg Pillsbury frozen puff
-pastry sheet

Defrost spinach and squeeze out water. Saute chopped onion and
chillies. When onion is clear add the spinach and cover and cooktill
spinach doesn't have a raw taste. Turn off stove and add the cream
cheese, mix well. Keep uncovered and let cool (room temp).
Prehead oven to 375.
Put a sheet of the puff pastry on foil, spread with the spinach
mixture and cover with remaining puff pastry sheet. Cut into squares
or diamonds etc. Bake for about 40min or till the crust is light
golden brown.

"Creamed Spinach " (Restaurant Copycat!)

Serves: 6-8
Prep. Time: 0:35

5 Tbls. butter OR margarine - divided
1/4 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. black pepper
1 dash ground nutmeg
1 cup half and half cream
4 oz. cream cheese - low-fat okay
1 sm. onion - minced
3 cloves garlic - minced
(2) 10 oz. pkgs. frozen chopped spinach - thawed
1/4 cup water
1/4 cup grated Parmesan cheese

-In a 2-quart saucepan over medium-low heat, melt 3 Tbls. butter; stir in flour, salt, pepper, and nutmeg; slowly whisk in cream; stir in cream cheese.
-Increase heat to medium; whisk mixture constantly until thick and smooth; remove from heat and set aside.
-In a skillet over medium-high heat, cook onions and garlic in remaining 2 Tbls. butter until transparent; stir spinach and water into pan.
-Reduce heat to medium-low; cover; simmer, stirring occasionally, for 8 minutes.
-Stir spinach mixture into creamy mixture; return to medium heat; heat, stirring often, until warmed throughout.
-Remove from heat; fold in Parmesan

**I am from Australia and when I saw creamed spinach I though "oh yuck....not in a million years!!! But I made it anyway as my husband wanted spinach...and to my surprise it was the most wonderful vegetable recipe I have ever tasted. I have made it twice this week....the only thing I did different was I put the creamed spinach into puff pastry and made it into a pie. I also added some of my homemade chilli to it . I will be making this recipe once a week through the winter. Absolutely the best. I would rather have an extra serving of this and not bother with dessert (sweets) I am checking out heaps of other recipes on your site here as well.....haven't yet made any of the others as I just can't get past the creamed spinach yet lol.

2-1/4 cups flour

1/4 tsp. salt

2/3 cup shortening

1-1/2 cups shredded CRACKER BARREL Sharp Cheddar Cheese

6 to 8 Tbsp. cold water

6 medium apples, peeled, cored

3/4 cup firmly packed brown sugar

1 tsp. ground cinnamon

1/4 cup (1/2 stick) butter or margarine


MIX flour and salt in large bowl; cut in shortening until mixture resembles coarse crumbs. Stir in cheese. Sprinkle with water while mixing lightly with fork; shape into ball. Divide dough into 3 equal portions. Roll out each portion to 14x7-inch rectangle on lightly floured surface; cut each into two 7-inch squares.

PLACE apple in center of each square. Fill apples with combined sugar and cinnamon; dot with butter. Fold pastry corners to top of apple; pinch edges together to seal. Place on cookie sheet.

BAKE at 425°F for 35 minutes or until apples are tender. Serve with thawed COOL WHIP Whipped Topping.

This is a favorite of my family. They request it for every holiday family gathering as well as many times in between!

1¼ hours 15 min prep
8 ounces cream cheese, softened
3 eggs, beaten
1/4 cup butter
1 cup shredded cheddar cheese
2 (10 ounce) boxes frozen spinach (regular or chopped)
3 tablespoons flour
salt

Thaw& drain spinach; squeeze out moisture.
Mix all ingredients and pour into greased 8x8 pan.
Bake uncovered at 350 degrees for 1 hour or until lightly browned.
