Fluffy Pancakes

1 cup of self-rising flour
1 tbsp sugar
1 cup of buttermilk /or/ regular milk if you don't any buttermilk
1 egg
2 tbsp vegetable cooking oil/ or/ butter melted

Preheat your griddle or frying pan. A nonstick pan works best.

Mix your dry ingredients in a large bowl (flour, sugar).
Add the egg and oil and mix well.
Slowly add the milk and stir until it looks like cake batter. Add more or less
depending on how thin you want the pancakes. If you happen to add too much
milk you can add a little bit more of the flour to the mix to correct the problem.

Pour a little bit out at a time onto the hot pan. A soup ladle works great in measuring out
just the right amount. Cook until bubbles start to form and it begins to set. Flip/turn over and cook
for a couple more minutes.

Serve hot with your favorite toppings.
They can be heat in the microwave for a minute if they should become cold.

I generally put 1 egg per cup of flower, then add milk a little at a time till it's the right consistancy...
put some oil in the pan, pour pancake mix in...
let it cook till either the bubbles are popped, or the liquid's gone solid (whichever comes first)...
flip it over, wait a min or to put on a plate =/ start the next one =P

Run out to the grocery store and buy some pancake mix, the kind that only needs water, mix the powder with your favourite bottled water (flavoured or plain) and fry in a hot, oiled pan, till bubbles appear on the surface. Flip them once and continue to cook until they are done through and through. Mm mm, drop them on your dish and stuff your face until you can eat no more. Mm!
Failing this, take a run over to your sweet old mother's place and beg her to spoil you, as she did, when you were her favourite child.
Don't you just love mothers?
